How to make the perfect scambled egg
First, you’ll crack some eggs into a bowl and whisk them up. Then I add a little cheese and a little milk or yougurt to keep them creamy. I like to use very low heat when cooking my eggs so they don’t burn. Low and slow is the ideal way to cook! I like to stir the eggs with a mini rubber spatula, slowly moving them around the pan so they are not sitting in one spot too long. This helps to make sure the eggs do not overcook. Once they reach that soft scramble and the cheese is melted, I know it is time to assemble the Scrambled Egg Avocado Toast.

Waffle: I use a gluten free toaster waffles but you can use any waffle you want! I prefer a toaster waffle made with rice flour or brown rice flour becuase those get the crispiest! You can even make your own waffles in a waffle iron with this vegan gluten free waffle recipe. But, if you don’t have waffles a slice of bread will work too! Just make sure to toast it up because if you’re like me, I like my toast crunchy!
Avocado: Make sure to pick a ripe avocado. I look for the dark ones that are almost black. If you pop the cap off it should be green underneath. If you press on it it should be soft, but not TOO soft. Its hard. I know. I swear avocados are perfect for less than 12 hours and then its over.
Chipotle mayonnaise: You can always use regular mayonnaise or another flavor aioli as a substitute for the chipotle mayonnaise.
Eggs: Feel free to use egg whites or a tofu scramble as a substitute for the whole eggs in this Scrambled Egg Avocado Toast
Cheddar cheese: Any type of cheese works great here! Shredded or sliced work just the same. For a dairy free recipe I use dairy free cheese!
Milk or yogurt: For a dairy free version, I use oat milk and plain dairy free yogurt.

Spread chipotle mayonnaise evenly over the toasted waffle. Top with mashed avocado.

In a small bowl, whisk together eggs, shredded cheddar cheese, milk or yogurt, salt, and pepper.

Heat a small skillet over low heat. Pour the egg mixture into the skillet and cook, stirring slowly and continuously, until the eggs reach your desired level of doneness.

Carefully place the slow-cooked scrambled eggs on top of the avocado and chipotle mayo-covered waffle.

- Always cook your slow scrambled eggs low and slow. Avoid high heat and I like to wash the pan right away so it come clean easily and quickly.
- Stir the eggs continuously to prevent them from sticking to the pan and to ensure even cooking.
- I like to warm the cheese along with the egg to keep the eggs moist, creamy and fluffy.
- While avocados can come in various shades from green to purple, a good indicator is a dark, almost black color with a slight yield when gently pressed. Avoid avocados that are overly hard or have bruises.
- I love to add ketchup on top of my Scrambled Egg Avocado Toast but you can also skip it or use salsa instead.
