I'm such a fan of slow cooked scrambled eggs on top of avocado toast. But let me elevate it for you: slow cooked scrambled eggs on top of an avocado toast waffle! Enter my new obsession, this Scrambled Egg Avocado Toast. I love avocado toast but the bread can get soggy if its not toasted perfectly and I like my avocado toast to be crunchy and hold its shape when I'm picking it up. The waffle base is a game changer.
This Scrambled Egg Avocado Toast is the perfect quick and easy breakfast! This delicious breakfast is packed with protein and good-for-you fats that will keep you full for hours!

Ingredients
  

  • 1 gluten free waffle
  • 1 avocado mashed
  • 2 tablespoons chipotle mayonnaise
  • 2 eggs
  • 2 tablespoons low fat shredded cheddar cheese or dairy free sub
  • 2 tablespoons oat milk or dairy free yogurt
  • 1 tbsp ketchup
  • Salt and pepper to taste

Instructions
 

  • Toast the waffle according to the package instructions.
  • Spread chipotle mayonnaise evenly over the toasted waffle. Top with mashed avocado.
  • In a small bowl, whisk together eggs, shredded cheddar cheese, milk or yogurt, salt, and pepper.
  • Heat a small skillet over low heat. Pour the egg mixture into the skillet and cook, stirring slowly and continuously, until the eggs reach your desired level of doneness.
  • Carefully place the slow-cooked scrambled eggs on top of the avocado and chipotle mayo-covered waffle.
  • Top with a drizzle of ketchup (optional).
  • Enjoy your delicious and hearty breakfast!

Notes

  • Stir the eggs continuously to prevent them from sticking to the pan and to ensure even cooking.
  • I like to warm the cheese along with the egg to keep the eggs moist, creamy and fluffy.
  • While avocados can come in various shades from green to purple, a good indicator is a dark, almost black color with a slight yield when gently pressed. Avoid avocados that are overly hard or have bruises.
  • I love to add ketchup on top of my Scrambled Egg Avocado Toast but you can also skip it or use salsa instead.
