Peanut Sauce Lettuce Wraps (Gluten Free)
Ingredients
Peanut Sauce:
- 1/2 cup creamy peanut butter
- 1/4 cup warm water
- 2 tablespoons gluten-free soy sauce or coconut aminos
- 2 tablespoons rice vinegar
- 1 tablespoon maple syrup
- 1 tablespoon lime juice
- 1/2 tablespoon sesame oil
- 1/2 teaspoon ground ginger
- 1/2 teaspoon garlic powder
Ingredients for the filling
- 2 small bell peppers
- 1 lb lean ground turkey
- 1/2 onion
- 1/2 cup coconut aminos
- 2 tbsp hot honey sriracha
- 2 tbsp rice vinegar
- 1-2 tbsp cornstarch
Instructions
- In a small bowl, mix together the peanut sauce, set aside.
- In a frying pan, add the ground turkey with 1 tbsp olive oil. Full cook. Set aside.
- In another frying pan (Or clean it and use it again like I do), add your diced peppers and onions with 1 tbsp olive oil. Sauté until fully cooked and soft.
- In a small bowl, whisk together the coconut aminos, the hot honey, rice vinegar and the cornstartch. Pour into the pan with the veggies and let it cook for 3-5 minutes until thick.
- Once the sauce has thickened, add back in the ground turkey and warm together for 3 minutes. Remove from heat and serve in a bowl with lettuce on the side. Drizzle the peanut sauce over each lettuce wrap before eating.
