Peanut Sauce Lettuce Wraps (Gluten Free)

I'm kind of in love with these Peanut Sauce Lettuce Wraps that are loaded with sweet and savory flavors and the most incredible crunchy texture. I can't stop making and munching them. They're a pretty low carb, high protein easy lunch or casual dinner.

Peanut Sauce:
- 1/2 cup creamy peanut butter
- 1/4 cup warm water
- 2 tablespoons gluten-free soy sauce or coconut aminos
- 2 tablespoons rice vinegar
- 1 tablespoon maple syrup
- 1 tablespoon lime juice
- 1/2 tablespoon sesame oil
- 1/2 teaspoon ground ginger
- 1/2 teaspoon garlic powder
Ingredients for the filling
- 2 small bell peppers
- 1 lb lean ground turkey
- 1/2 onion
- 1/2 cup coconut aminos
- 2 tbsp hot honey sriracha
- 2 tbsp rice vinegar
- 1-2 tbsp cornstarch
In a small bowl, mix together the peanut sauce, set aside.
In a frying pan, add the ground turkey with 1 tbsp olive oil. Full cook. Set aside.
In another frying pan (Or clean it and use it again like I do), add your diced peppers and onions with 1 tbsp olive oil. Sauté until fully cooked and soft.
In a small bowl, whisk together the coconut aminos, the hot honey, rice vinegar and the cornstartch. Pour into the pan with the veggies and let it cook for 3-5 minutes until thick.
Once the sauce has thickened, add back in the ground turkey and warm together for 3 minutes. Remove from heat and serve in a bowl with lettuce on the side. Drizzle the peanut sauce over each lettuce wrap before eating.
