TASTE & TEXTURE

These Buffalo Chicken Air Fryer Tacos are crunchy since they are made with gluten-free chicken cutlets. They also have air fryed sweet potato cubes in them for more crunch. They are spicy since they are smothered with buffalo sauce but you can add as much ranch as you want to offset the spiciness.

These gluten-free chicken cutlets get really crispy in the air fryer. If you prefer a more crispy option continue to air fry until bread crumbs reach desired cirspiness.

INGREDIENTS & SUBSTITUTIONS

Gluten-free chicken cutlets

You can make these ahead of time or purchase gluten-free chicken tenders if you want to make your life easier. See the note below if you want to make the cutlets yourself at home in the air fryer! They do not use any oil or any butter.


Corn tortillas

These Buffalo Chicken Air Fryer Tacos are made with corn tortillas because they are naturally gluten-free. I use soft corn tortillas but you can also use hard corn shells. You can also sub cauliflower tortillas or any other type of gluten-free tortillas! If you are not gluten-free you can use flour tortillas.

If using corn tortillas they must be warmed before serving. Corn tortillas straight out of the package are not good. They are hard and dry and difficult to work with. Make sure you warm them in an oven or on the burner for a few minutes so they are easier to work with!

You can make these Buffalo Chicken Air Fryer Tacos healthier or grain-free by making them in lettuce wraps. You can use any lettuce or leafy green carrier you want! You can sub romaine, bib, or butter lettuce, endives or green leaf lettuce. This forms a carrier for the wraps that is grain free! Green leafy vegetables provide vitamins, minerals and fiber and are also low in calories.

HOW TO MAKE THE CHICKEN CUTLETS

  1. Sandwich the chicken beasts between 2 pieces of parchment paper and pound until 1″ thin.
  2. Combine breadcrumbs in a bowl.
  3. In a separate bowl add the egg whites.
  4. Dip the chicken breasts into the egg whites, then into the breadcrumb mixture, coating the whole piece. 
  5. Dip back into the egg white and coat piece in breadcrumb mixture for a second time.
  6. Air fry on 390 for approx 15-17 minutes until chicken is cooked through. Flip overhalf way to make sure all breading is getting crispy.

HOW TO MAKE THE TACOS

DIRECTIONS

STEP 1

Preheat oven to 350. Cut gluten-free chicken cutlet into 1” cubes. Toss with buffalo sauce and add to frying pan or air fryer for 3-5 minutes to heat up.

STEP 2

While the chicken is warming, Add corn tortillas to preheated oven and warm for 3-5 minutes so the tortillas are easier to work with. It is OK to add to a pan or just right on the oven rack.

STEP 3

Remove corn tortillas from the oven and place onto serving plate. Top with avocado crema, buffalo chicken cutlet cubes. Top with red onion, cherry tomatoes,and arugula.

EXPERT TIPS & TRICKS

These Buffalo Chicken Air Fryer Tacos are full of fresh healthy flavor and packed with spicy buffalo taste. They are topped with ranch dressing to offset the buffalo spice but you can make them as spicy or mild as you want! For a spicier taste, add more buffalo sauce. For a more milder taste you can add less buffalo sauce.

To make the recipe easier you can prepare the chicken cutlets ahead of time and store in an air tight container in the fridge for 3 days.

HOW TO SERVE & STORE

Leftovers can be store in an air tight container in the fridge for up to 3 days.

I like to warm my corn tortillas up in the oven at 350 for 2-4 minutes to get them warm and easy to work with!

Ingredients

  • 1 chicken cutlet
  • ½ cup diced cherry tomatoes
  • 1 cup arugula
  • ¼ cup diced red onion
  • 1/2 cup air fried sweet potato cubes with garlic
  • 2 tbsp Buffalo sauce
  • 3 corn tortillas

Instructions

  • Preheat oven to 350.
