INGREDIENTS & SUBSTITUTIONS
Air Fried, Gluten-free chicken cutlets
You can make these ahead of time or purchase gluten-free chicken tenders if you want to make your life easier. See the note below if you want to make the cutlets yourself at home in the air fryer! They do not use any oil or any butter.
The gluten-free chicken cutlets in these Air Fryer Chicken Tacos get really crispy in the air fryer. If you prefer a more crispy option continue to air fry until bread crumbs reach desired cirspiness.
Corn tortillas
These Air Fryer Chicken Tacos are made with corn tortillas because they are naturally gluten-free. I use soft corn tortillas for the tacos but you can also use hard corn shells. You can also sub cauliflower tortillas or any other type of gluten-free tortillas! If you are not gluten-free you can use flour tortillas.
If using corn tortillas they must be warmed before serving. Corn tortillas straight out of the package are not good. They are hard and dry and difficult to work with. Make sure you warm them for a few minutes in the air fryer to make them easier to work with!
Sweet Potatoes
To offset the buffalo flavor in these tacos, I added crispy sweet potato cubes. They’re crispy and really help these tacos not end up too spicy. To prep ahead of time, cut the sweet potato into 1/2″ cubes. Store in an air tight container until ready to air fry. Spray with olive oil cooking spray, top with garlic powder and air fry on 390 for 7-10 minutes until the edges are crispy!

HOW TO MAKE THE CHICKEN CUTLETS
- 2 Chicken Breasts
- 1/2 cup Gluten free breadcrumbs
- 1/2 cup egg whites
- Sandwich the chicken beasts between 2 pieces of parchment paper and pound until 1″ thin.
- Combine breadcrumbs in a bowl.
- In a separate bowl add the egg whites.
- Dip the chicken breasts into the egg whites, then into the breadcrumb mixture, coating the whole piece.
- Dip back into the egg white and coat piece in breadcrumb mixture for a second time.
- Air fry on 390 for approx 15-17 minutes until chicken is cooked through. Flip overhalf way to make sure all breading is getting crispy.
HOW TO MAKE THE TACOS
DIRECTIONS
STEP 1
At the same time, cut the sweet potato into 1/2″ cubes. Spray with olive oil cooking spray, top with garlic powder and air fry on 390 for 7-10 minutes until the edges are crispy! You can air fry the chicken cutlets at the same time as the sweet potato cubes.
Cut gluten-free chicken cutlet into 1” cubes. Toss with buffalo sauce and add to frying pan or air fryer for 3-5 minutes to heat up. If cooking at the same time as the sweet potatoes, wait until the potatoes have 3-5 minutes left before adding the chicken cutlets since they have different cooking times.
STEP 2
Preheat oven to 350. While the chicken is warming, Add corn tortillas to preheated oven and warm for 3-5 minutes so the tortillas are easier to work with. It is OK to add to a pan or just right on the oven rack.
STEP 3
Remove corn tortillas from the oven and place onto serving plate. Top the Air Fryer Chicken Tacos with avocado crema, buffalo chicken cutlet cubes. Add red onion, cherry tomatoes, and arugula on top.

EXPERT TIPS & TRICKS
These Air Fryer Chicken Tacos are full of fresh healthy flavor and packed with spicy buffalo taste. They are topped with ranch dressing to offset the buffalo spice but you can make them as spicy or mild as you want! For a spicier taste, add more buffalo sauce. For a more milder tasting taco you can add less buffalo sauce.
