ingredients & substitutions
Cooked white rice: The base of rice is the start to the spicy tuna poke bowl. You can substitute brown rice, sushi rice, quinoa, or cauliflower rice for a different texture or additional nutrients. Any kind of rice that is fully cooked rice works well here. You can cook the rice in the microwave, on the stovetop or in a rice cooker. Add a dash of rice vinegar to the rice for a traditional poke bowl taste.
Canned tuna: A source of protein. Use fresh fish or raw fish in these spicy tuna poke bowls. You can replace it with cooked chicken, salmon, or lentils for a variation. You can use any kind of tuna including yellowfin tuna, raw tuna, bigeye tuna, fresh ahi tuna steaks, albacore tuna, sashimi-grade tuna or chunks of fresh tuna. For best results I like to use high-quality tuna or high-quality canned tuna. All can be found at your local grocery store.
Sliced avocado: Adds good for you fats and creaminess. Cubed tomatoes, mashed sweet potato, or crumbled feta cheese can be used instead.
Chopped kale: Leafy green vegetable. Spinach, arugula, or mixed greens work as substitutes. Add some seaweed salad for a different poke bowl twist. I like adding extra kale for lots of fresh toppings on my tuna!
Chopped carrots: For sweetness and crunch. I like to sub chopped bell peppers, celery, or broccoli.
Chopped cucumber: Adds freshness and hydration. Substitute with chopped zucchini, radishes, or snap peas for a similar texture.
Spicy mayo: The poke bowl sauce. Provides extra flavor.
Chopped green onions: Adds a bit of oniony flavor. Chopped chives can be used instead.
