I was diagnosed with celiac disease (the celiac gene) and a lactose intolerance in my early 20s and have been on a mission since to create easy, delicious recipes you wouldn’t even know are gluten free! Once I started eating gluten free the first easy weeknight dinner recipes I wanted to tackle were gluten free pizzas! This Bruschetta Chicken Pizza recipe is a gluten free recipe and an easy nut free recipe, can be made dairy free as well.
The combination of fresh bruschetta and grilled chicken is hands down one of my favorites! This recipe is also a quick and easy gluten free weeknight meal, just like my one pan gluten free gnocchi sillet.

Gluten-free pizza crust: The base of my Bruschetta Chicken Pizza, choose your favorite gluten free crust or refrigerated dough or try a cauliflower crust for a veggie-packed twist.
Shredded mozzarella cheese:Use any shredded cheese you like! I like to use a dairy-free alternative like Daiya shreds for a dairy free Bruschetta Chicken Pizza.
Fresh bruschetta: I buy it already made to save time. Or sometimes I make mu own! If you’re not a fan of tomatoes, you can substitute with pesto or a tapenade for a different flavor profile.
Grilled chicken: I like to buy grilled chicken already made from the prepared food section of the grocery store. You can also grill you own. To save time sometimes I even use a rotisserie chicken. Any leftover protein you have on hand will work like grilled shrimp, tofu, or even tempeh for a vegetarian option.
Fresh basil: Adds a touch of freshness. I substitute with spinach or arugula if I don’t have basil on hand.

Step 1
Preheat oven to 400°F (200°C). Place the gluten-free pizza crust on a baking sheet.
Step 2
Spread the cheese evenly over the crust.
Step 3
Bake for 10-12 minutes, or until the cheese is melted and bubbly.
Step 4
Remove from the oven and top with fresh basil.
Step 5
Top with the bruschetta and grilled chicken slices. Slice and enjoy!
expert tips & tricks
- For a spicier Bruschetta Chicken Pizza, add a pinch of red pepper flakes to the bruschetta mixture.
- If you don’t have fresh bruschetta, you can use store-bought sun-dried tomatoes and chopped fresh herbs.
- You can also use any type of grilled protein you like, such as beef, shrimp, or tofu.
- For a vegan Bruschetta Chicken Pizza, use vegan cheese.
Recipe variations
- For a low-carb Bruschetta Chicken Pizza, I skip the store-bought crust and bake a cauliflower pizza base instead.
- When I like to keep it light I use fat-free mozzarella.
how to serve, store and meal prep
I always serve the Bruschetta Chicken Pizza sliced and warm. When I serve it for an appetizer or light lunch I like to cut it into smallre sloces.
I store leftovers airtight in the fridge for up to 2 days. I freeze individually wrapped slices on a baking sheet, then transfer to zip-lock bags. To reheat, I thaw overnight in the fridge or pop frozen slices straight into the toaster oven until crispy and warmed through.

Ingredients
- 1 pizza crust gluten free
- 1 cup mozzarella cheese (dairy-free or fat-free) shredded
- 5 tbsp fresh bruschetta or sliced cherry tomatoes
- 1/4 cup chicken
- 2 tbsp fresh basil, chopped
