Ingredients & Substitutions
Salmon Filet: This provides the protein on the salmon avocado toast! You could substitute with other firm, flaky fish like cod, shrimp or tuna steaks. If you don’t like fish you can skip it.
Lemon: This adds brightness and acidity!
Dijon Mustard: This adds a tangy depth. Truly I could put dijon mustard on everything. If you don’t have dijon mustard honey mustard would work too.
Honey: This provides sweetness and helps create a glaze. You can also use maple syrup, agave nectar, or even a tiny bit of brown sugar.
Gluten-Free Bread: This provides the base for the gluten free avocado toast. I like to toast my slices for a better crunch.
Avocado: This adds your creamy base.
Olive Oil: This drizzle adds richness to the salmon avocado toast. I love using a flavored olive oil like a lemon olive oil.
How do I make this recipe?
- Get your air fryer ready: Turn your air fryer on and set it to 400 degrees Fahrenheit (if your air fryer doesn’t have exact temperatures, just use a medium-high setting). This is like preheating an oven.
- Prep the lemons: Slice the lemon into thin rounds. These will go under the salmon and add flavor.
- Lemon bed for the salmon: Place the lemon slices in the bottom of your air fryer basket. This creates a little “bed” for the salmon.
- Make the yummy sauce: In a small bowl, mix together the garlic, Dijon mustard, and honey. Stir it up until it’s all combined. This is our glaze for the salmon.
- Glaze the salmon: Place the salmon filet on top of the lemon slices in the air fryer. Then, use a spoon or a small knife to spread the honey-mustard mixture evenly over the top of the salmon.
- Air fry the salmon: Put the air fryer basket back in and cook for 10-12 minutes. You’ll know it’s done when it’s flaky and opaque (not see-through anymore) and reaches an internal temperature of 135°F – 140°F. If you don’t have a thermometer, gently flake a piece with a fork, it should be cooked through.
- Toast the bread: While the salmon is cooking, pop your gluten-free bread into a toaster or toaster oven until it’s golden brown and crispy.
- Prep the avocado: Once the salmon is done, carefully take it out of the air fryer and let it cool for a minute or two. While it’s cooling, cut the avocado in half, remove the pit, and either slice it or mash it with a fork.
- Assemble the toast: Spread the avocado onto your toasted bread. Then, place the cooked salmon on top of the avocado. You can flake the salmon into smaller pieces if you prefer.
- The finishing touch: Drizzle the salmon avocado toast with a little olive oil. Finally, sprinkle with a pinch of salt and pepper to taste.
Expert Tips & Tricks
The main protein of this salmon avocado toast is of course the salmon! I like to air fry the salmon first while I start assembling the rest of the avocado toast.
Toast your bread fresh every time you’re making the meal. So even if you make the salmon ahead of time, wait until you’re ready to eat to toast up the bread.
Can I prep the Salmon the Night Before?
Yes!! You can even prepare the salmon the night before to make this meal even quicker. I actually love making a double batch of this salmon. I’ll use half for dinner with some rice or poke bowl, and then use the rest for this salmon avocado toast.
Can I make the salmon in the oven instead of the air fryer?
Yes! If you want to do this in the oven instead of the air fryer, I recommend cooking on 425 for the same amount of time.
How Do I Serve the Salmon Avocado Toast?
This avocado toast with salmon can be served as is if you’re serving for breakfast. You can even pop a fried egg on top! For lunch or dinner I like to serve with a side salad, chips or fries! You can serve with the salmon hot and fresh, or with the salmon chilled.
How do I Store and Meal Prep the salmon avocado toast?
To store the salmon, I let it cool completely before refrigerating in an airtight container for up to four days. I would not make the full salmon avocado toast and store it in the frige as the bread will get soggy.
To meal prep into individual portions, divide the salmon into separate containers. These individual portions are my favorite for great grab-and-go lunches or quick dinners during the week. Just pull out some salmon and make your gluten free avocado toast fresh.
