    10-Minute Gluten Free Lettuce Wraps

    Gluten Free Lettuce Wraps are a quick and easy lunch or weeknight dinner recipe that takes less then 10 minutes to throw together and minimal ingredients. When I first went gluten free I really struggled to find an easy lunch idea.

    I hate when a lunch recipe takes 20 ingredients, over an hour to make and makes a ton of dirty dishes. These Gluten Free Lettuce Wraps are super simple, especially since I always use left over of my shredded gluten free bbq chicken or a rotisserie chicken that I don’t need to roast from scratch! I love time saving hacks in recipes.

    This easy lunch recipe is gluten free and dairy free just like my air fryer elote hot dogs and my spicy chicken burger.

    WHY YOU’LL LOVE THIS RECIPE

    • Easy to meal prep: I always make a double batch of my Gluten free BBQ chicken for these Gluten Free Lettuce Wraps and store it in the refrigerator for later use.
    • These lettuce wraps are fresh, flavorful, and quick! These BBQ chicken Lettuce Wraps will be on the table in no time. Plus, they’re a major crowd pleaser!
    • Allergy Friendly: This lettuce wrap recipe is naturally gluten-free! If you’re celiac or gluten-free like me this recipe is a great option for a gluten free lunch! Plus these Gluten Free Lettuce Wraps also naturally dairy free since there is no cheese!

    INGREDIENTS & SUBSTITUTIONS

    Lettuce: If you do not have green leaf lettuce on hand, you can substitute another leafy green such as butter lettuce, iceberg lettuce, etc.

    Chicken: I always cook the chicken ahead of time in a slow cooker or Instant Pot. This way, its already made when you want to have this recipe. If I don’t meal prep the chicken ahead of time I love using a rotisserie chicken to save time.

    If you do not have shredded chicken on hand, you can substitute cooked ground turkey or ground chicken. You can also use shredded beef or pulled pork as a substitute for this Gluten Free Lettuce Wraps.

    BBQ sauce: I love sweet baby rays. If you don’t have BBQ sauce on hand, you can substitute another type of sauce, such as ketchup, honey mustard, gluten free soy sauce or gluten free teriyaki sauce for these Gluten Free Lettuce Wraps.

    DIRECTIONS

    Separate the lettuce leaves. Wash and dry if needed.

    Place a spoonful of shredded chicken in each lettuce leaf. (I use cold chicken but you can heat if desired.) Top with pickles.

    In a skillet, add the peppers and onions. Sautee on medium for approx 10-15 minutes until the peppers and onions are soft.

    Top each lettuce wrap with peppers and onions.

    Add more BBQ sauce on top of the Gluten Free Lettuce Wraps if needed. Fold up the lettuce leaf and enjoy!

    EXPERT TIPS & TRICKS

    • If you want to add vegetables to the Gluten Free Lettuce Wraps, you can cook them in the slow cooker with the chicken. Simply add chopped onions, peppers, or other vegetables to the slow cooker during the last 30 minutes of cooking.

    RECIPE VARIATIONS

    • Mexican lettuce wraps: Chopped cilantro, salsa, black beans, corn, crushed corn tortilal chips
    • Buffalo lettuce wraps: Buffalo sauce, Blue cheese dressing
    • BBQ Ranch lettuce wraps: Ranch dressing, red onion, bbq sauce
    • Spicy lettuce wraps: Sriracha sauce, jalapeno peppers

    HOW TO SERVE & STORE

    To serve, I place a spoonful of shredded chicken in each lettuce leaf. Top with my toppings to the Gluten Free Lettuce Wraps and enjoy. I love adding a little extra bbq sauce on top!

    BBQ chicken lettuce wraps can be stored in the refrigerator for up to 3 days. To store, I place the assembled lettuce wraps in an airtight container.

    Gluten Free chicken Lettuce Wraps shouldn’t be stored with the lettuce. The toppings like chicken, peppers and onions can also be stored in the freezer for up to 2 months. To freeze, I place the toppings in a freezer-safe container. Then, when you want to eat, all you need is fresh lettuce.

    To reheat the chicken for the top of the Gluten Free chicken Lettuce Wraps, simply place it in a microwave-safe bowl and microwave on high for 30-60 seconds, or until heated through. You can also reheat it in a skillet over medium heat until heated through.
