    I love to meal prep shredded chicken at the begining of the week. Its easy to throw into any weeknight recipe and saves me a ton of time when making weeknight gluten free dinners. This recipe for Gluten Free BBQ Chicken is incredibly easy to make. It requires only a few ingredients and minimal effort. The chicken is made in the slow cooker…so basically a one pot meal with minimal clean up!

    This recipe is an easy gluten free weeknight dinner with chicken and a nut free recipe too, just like these gluten free fried chicken tacos and this Singapore chicken curry.

    • The slow cooker method ensures that the chicken is cooked through evenly and thoroughly without requiring constant attention. Set it and forget it recipes are my favorite. They take a minimal amount of effort, which I love.
    • The meat is incredibly tender and falls apart effortlessly, making it perfect for a variety of dishes. You can use any leftovers in casseroles, one pan meals, sandwiches or pizzas!
    • When using the slow cooker there are minimal dishes you need to clean up afterwards! Just one pot and you’re done.
    • I love making double or triple the recipe to have individual portions frozen for when I am in a pinch!

    Boneless, Skinless Chicken Breasts: Chicken breasts are the star ingredient in this recipe. They are lean and easy to find in the grocery store. I like chicken breasts the best but if you prefer, you can use boneless, skinless chicken thighs for a slightly richer flavor. This will contribute to extra moistness in this Gluten Free BBQ Chicken but they dish will not be as lean.

    Gluten-Free BBQ Sauce:The gluten-free BBQ sauce is the key here! I love BBQ sauce because it is sweet, tangy, and smoky. When choosing a gluten-free BBQ sauce, check the label carefully to ensure it meets your dietary requirements! I like ones that say gluten free on the bottle so I know its safe. I like sweet baby rays the best!

    Apple Cider Vinegar: Apple cider vinegar adds a subtle acidity to the BBQ sauce mixture, balancing the sweetness and enhancing the overall flavor. I like this because it elevates the taste instead of just using the bottle of BBQ sauce alone. I like to add my own twist to a bottled sauce. It also acts as a tenderizer, slightly breaking down the chicken fibers and contributing to its tenderness. If you don’t have apple cider vinegar, you can substitute it with white vinegar or lemon juice in this Gluten Free BBQ Chicken recipe.

    Honey: Honey adds a touch of sweetness and depth of flavor to the BBQ sauce mixture. It also helps to caramelize the chicken slightly during cooking, enhancing its texture and flavor. You can substitute the honey with maple syrup or agave nectar.

    Pour the BBQ sauce, apple cider vinegar and honey into the slow cooked and mix together.

    Place the chicken breasts in a slow cooker and cover in bbq sauce mixture.

    Cover the slow cooker and cook on high for 2-4 hours, or until the chicken is cooked through and shreds easily with two forks.

    • To add a smoky flavor to this Gluten Free BBQ Chicken, you can add a pinch of smoked paprika BBQ sauce mixture. I even like to add a pinch of bbq rub.
    • When I want BBQ chicken with a kick, you can add a pinch of red pepper flakes or hot sauce to the BBQ sauce mixture.
    • To keep this recipe dairy free I make sure the bbq sauce does not contain dairy.
    • To make sure this recipe is gluten free I made sure my sauce is gluten free.

    Serving:

    This Gluten Free BBQ Chicken is incredibly versatile. I like to use it on:

    • Sandwiches: I pile the shredded BBQ chicken high on toasted buns, topped with my favorite toppings, such as coleslaw, pickles, or onions.
    • Salads: I toss the shredded BBQ chicken with your favorite salad greens, vegetables, and dressing for a flavorful and satisfying lunch or dinner option. I also love to buy a salad kit to make my life easier and just add this as protein on top.
    • Tacos: I love to fill warm corn tortillas with shredded BBQ chicken, your favorite toppings, such as cheese, lettuce, tomato, and sour cream, and enjoy! Sometimes I even bake the taco to get a crispy shell and heat up the filling at the same time.
    • Pizza: Top your favorite gluten free pizza crust with shredded BBQ chicken, cheese, and your favorite toppings for a unique and flavorful pizza night.

    Storage: To store the Gluten Free BBQ Chicken in the refrigerator, I place it in an airtight container and refrigerate for up to 3 days.

    To store the shredded BBQ chicken in the freezer, I place it in a freezer-safe bag or container and freeze for up to 4 months.

    Reheating: To reheat the Gluten Free BBQ Chicken from the refrigerator, I place it in a microwave-safe dish and heat until warmed through. You can also reheat it on the stovetop over low heat, stirring occasionally, until warmed through.

    To reheat the shredded BBQ chicken from the freezer, I thaw it overnight in the refrigerator or defrost it in the microwave. Once thawed, I reheat it as described above.

    Meal Prep: The Gluten Free BBQ Chicken is perfect for meal prep! I portion it out into individual containers and store it in the refrigerator or freezer for quick and easy meals throughout the week. You can use it to make sandwiches, salads, tacos, or pizza, or enjoy it on its own.
