    I always loved poke bowls but after going gluten free it was really hard to find a poke restaurant that had gluten free soy sauce. As someone who is gluten free and allergic to almonds it is so important to me to make easy gluten free recipes without nuts. This poke bowl with chicken an easy gluten free dinner. It is also dairy free and nut free.

    If you didn’t know, poke is a traditional hawaiian dish usually made with fresh sushi-grade tuna but in this version of a poke bowl recipe you can use any fish or chicken you want.

    The Success Boil-in-Bag Jasmine Rice cooks in mere minutes. The air fryer ensures the salmon is done quickly. With minimal chopping involved and fresh ingredients, the entire recipe can be assembled and ready to enjoy in under 15 minutes.

    If you have leftover cucumber and spicy mayo, you can also make these spicy tuna rice paper tacos or this 15 minute poke bowl. I’m a big “no-waste” person so I love finding recipes that you ingredients I have left over!

    • Assemble the Poke Bowl directly in serving bowls to save dishes. No dishes = way more time to relax and unwind!
    • Makes for a the perfect quick lunch or weeknight dinner. You can bring this easy meal to lunch in the office!
    • You can add different kinds of vegetables on top such as fresh veggies, pickled veggies, red peppers or pickled sweet onion. I love using the same rice and protein base but switching up my vegetables every time I have it so it feels new and exciting.

    ingredients & substitutions

    Salmon filets: The salmon filets are the star of the dish here if you ask me. You can use high-quality salmon or wild-caught salmon. Raw salmon or sockeye salmon works too. If using raw salmon, make sure it is sushi grade salmon (if I’m not sure I usually ask at my local fish counter). Frozen salmon (thawed properly) from the freezer section works too. This will affect the freshness of the fish but not the taste. If you do not want to use sushi-grade salmon, use any other sushi-grade fish such as sushi-grade tuna. You can also use canned tuna or salmon if you prefer. This is a great way to avoid raw seafood at home. You can find any of these high quality fish options at your local grocery store seafood counter. For raw tuna or raw salmon visit your local fishmonger or a high-end grocery store. 

    Boil-in-Bag Jasmine Rice:  I used Success Boil-in-Bag Jasmine Rice. Easy white rice in a portioned bag for convenience.  I mean thats what we’re really here for right? EASY and QUICK dinners. So I like to save myself as much time as possible!! Substitute brown rice or sushi rice if needed.

    The star of the Easy Air-fryer Salmon Poke Bowl is the air-fried salmon. Cooked to flaky perfection, it boasts a slightly crisp exterior thanks to the air fryer’s magic. The sesame garlic seasoning adds a touch of savory sweetness, complementing the natural flavor of the fish. Fluffy rice forms the base of the bowl, providing a foundation for the other ingredients.

    Chopped cucumber and green onion add a refreshing element with their crisp bite, while the creamy avocado lends a touch of richness and healthy fats. The peanut sauce truly ties the whole dish together. Its sweet, salty, and potentially spicy profile creates a flavor explosion in every mouthful.

    directions

    1. Prepare the rice: Follow the instructions on the box to cook the Success Boil-in-Bag Jasmine Rice. This usually takes about 10 minutes on medium heat.
    2. Air-fry the salmon: Preheat your air fryer to 400°F (200°C). Season the salmon filet generously with sesame garlic seasoning.
    3. Cooking the salmon: Depending on the thickness of your filet, air-fry the salmon for 8-12 minutes. A good indication of cooked salmon is when the flesh flakes easily with a fork.
    4. Assemble the bowl: While the salmon cooks, fluff the cooked rice.
    5. Prepare the toppings: Arrange the chopped cucumber, green onions, and sliced avocado on top of the bed of rice.
    6. Flake the salmon: Once cooked, remove the salmon from the air fryer and flake it or cut with a sharp knife into bite-sized pieces.
    7. Make the peanut sauce: In a small bowl, combine peanut sauce, hot sauce, and soy sauce to your desired taste. Aim for a balance of sweet, salty, and spicy flavors.
    8. Assemble the poke bowl: Top the bed of rice with the flaked salmon, chopped peanuts, and drizzle the whole bowl with the peanut sauce.

    • Top the Easy Air-fryer Salmon Poke Bowl with red pepper flakes, sriracha sauce, spicy mayo, sriracha mayo or any other spicy poke bowl sauce for a spicy kick. 
    • Top with lime juice or lemon juice for some acid. 
    • Serve with cauliflower rice for a low carb recipe. I also love mixing cauliflower rice and white rice together.
    • Add any other of your sushi inspired favorite toppings such as seaweed salad, sweet onions, red cabbage, creamy avocado slices! Spicy sauce and ponzu sauce are a great addition too!
    • Season with sesame seeds, black pepper, sea salt and garlic for a more seasoned flavor. 
    • Drizzle with sesame oil or olive oil if desired.
    • Use the highest quality fish.
    • Add more green vegetables for more health benefits.

    • Leftovers of the Salmon Poke Bowl can be stored in an airtight container for up to 2 days. Discard leftover assembled bowls containing raw fish and do not save for the next day.
    • Cooked salmon (flaked) can be frozen for up to 3 months. Cooked rice freezes well too, lasting up to a month.

    This Easy Air-fryer Salmon Poke Bowl recipe is perfect for an easy weeknight dinner! It is basically a deconstructed sushi roll, for a perfectly easy diy sushi night! The Success Boil-in-Bag Jasmine Rice cooks in mere minutes.

    Ingredients
      

    • 1 salmon filet
    • 2 tbsp Sesame garlic seasoning
    • 1 bag of boil-in-bag jasmine rice
    • 2 tbsp eanuts Chopped
    • 1/4 cup cucumber Chopped
    • 2 tbsp green onions Chopped
    • 1/2 avocado sliced
    • 2 tbsp Peanut butter
    • 1 tsp Hot sauce
    • 3-4 tbsp gluten free Soy sauce or coconut aminos

    Instructions
     

    • Prepare the rice: Follow the instructions on the bag to cook the boil-in-bag jasmine rice.
    • Air-fry the salmon: Preheat your air fryer to 400°F (200°C). Season the salmon filet generously with sesame garlic seasoning.
