This avocado toast recipe is the perfect breakfast recipe for busy mornings. With just a handful of ingredients, you can whip up a satisfying breakfast or brunch in 15 minutes or less, just like my air fried gluten free bagel breakfast. The gluten free bread is toasted and topped with creamy avocado and a poached egg!

INGREDIENTS & SUBSTITUTIONS
Avocado: Creating the base of the easy avocado toast. Make sure to choose ripe avocados.
Bread (gluten-free): Base for the piece of toast. Substitute: Any bread you prefer depending on your dietary restrictions (crusty bread, sour dough bread, fresh bread, crunchy toast, whole wheat bread, whole grain bread, regular wheat, rye etc.). I like canyon heritage gluten free bread the best!
Parsley: Fresh herb for garnish. Substitute with any fresh herbs such as chives, cilantro, or a pinch of dried herbs (Italian seasoning).
Garlic salt: Seasoning with garlic flavor. Substitute: Salt and a pinch of garlic powder.
Pepper: Adds spice. Substitute: None, or a pinch of red pepper flakes for a kick.
Cream cheese: Spread for the toast. Substitute: Mashed ricotta cheese, cottage cheese, or sour cream. You can also use my vegan tofu cream cheese for a dairy free option!
Eggs: Poached is the perfect egg topping. Poaching eggs is actually really simple! And the best part is the runny yolks on the simple avocado toast! But, if you want to skip them, a great option is to use any other kind of egg including egg whites, runny eggs, hard-boiled eggs, scrambled eggs or a fried egg on top!
TASTE & TEXTURE
This Cream Cheese Avocado Toast With a Poached Egg is packed with fresh flavors. The avocado is soft and smooth, while the bread is toasted and crispy. I like to add a drizzle of oil to my cream cheese avocado toast to give it extra flavor. I always season my avocado toast with salt and pepper for a seasoned taste.
DIRECTIONS
- Place the bread slices in a toaster or preheat a pan with butter or oil over medium heat. Toast until golden brown and crisp.
- While the bread toasts, cut the avocado in half, remove the pit, and scoop out the flesh into a bowl. Mash avocado with the back of a fork until slightly chunky. Season with a pinch of salt and pepper (optional).
- The best method to create a perfect poached egg: Fill a medium saucepan with about 2 inches of hot water. Bring the water to a simmer (gentle bubbles). You can add 1 tablespoon of white vinegar or lemon juice to the water to help the eggs hold their shape (optional).
- Crack each egg into a separate small bowl.
- Gently swirl the boiling water with a spoon to create a small vortex.
- Immediately slide each egg from the bowl close to the center of the swirling water.
- Simmer for 3-4 minutes for a runny yolk, or slightly longer for a firmer egg yolk.
- Spread the softened cream cheese on each slice of toast. Top with the mashed avocado mixture.
- Gently remove the poached eggs from the water using a slotted spoon. Drain any excess water by placing them on a paper towel for a moment.
- Place the poached egg on top of each avocado toast. Sprinkle the Cream Cheese Avocado Toast With a Poached Egg with chopped parsley, garlic salt, and additional black pepper to taste.

- For perfectly round poached eggs, use the freshest eggs possible.
- You can adjust the cooking time of the eggs depending on your preference for yolk consistency.
- Feel free to experiment with other toppings like crumbled feta cheese and a squeeze of lemon juice for a mediterranean twist.
