These Buffalo Air Fryer Chicken Tacos are filled with chicken, sweet potatoes, buffalo sauce and arugula. The golden brown sweet potatoes and chicken are made in the air fryer! Then the warm tortillas are warmed up in the air fryer as well! Cooking in the air fryer basket helps make these tacos in record time. They are easy to throw together and make for a perfect taco tuesday! These tacos are spicy and smothered in buffalo sauce, just like my gluten free buffalo chicken caesar salad and my gluten free buffalo chicken stromboli.

INGREDIENTS & SUBSTITUTIONS
Chicken: Use pre-shredded or shredded leftover chicken for speed. Bake or grill chicken for a lower-fat option. Use rotisserie chicken for a time saving hack.
Sweet potatoes: best results roast or bake in the air fryer with non-stick cooking spray. Air frying cooking time may vary based on air fryer and sweet potato sizes. Use parchment paper to make sure the potatoes dont stick to the air fryer pan.
Tomatoes: Cherry tomatoes are easier to eat, but diced Roma tomatoes work too.
Arugula: Baby spinach or romaine lettuce are good substitutes.
Red onion: White onion or green onion work in a pinch.
Buffalo sauce: Adjust heat level to your preference. Use BBQ sauce for a different flavor.
Corn tortillas: Soft corn tortillas are naturally gluten free. If you are not gluten free soft flour tortillas work too. You can also use gluten free crispy tacos made from corn for a hard taco shell. Use mini corn tortillas for mini chicken tacos.
DIRECTIONS
- Prepare the chicken: If you haven’t already, air-fry your chicken breast until fully cooked on the grill or bake setting. Once cooked, cut into smaller pieces.
- Wash and dice a medium sweet potato into small cubes. Toss them in a medium bowl with 1 tablespoon avocado oil, a pinch of salt, and a pinch of garlic powder. Add to air fryer basket in a single layer. Air-fry them at 400°F for 15-20 minutes, or until tender and slightly crispy.
- Add the corn tortillas in the air fryer for a few minutes to make them pliable and easy to work with.
- Remove the corn tortillas from the air fryer.
- Top each tortilla with chicken pieces, sweet potato cubes, diced cherry tomatoes, red onion, and arugula.
- Finish with a drizzle of extra Buffalo sauce, a little salt and black pepper. Option to add lots of cheese or dairy free cheese, fresh cilantro or a drizzle of lime juice.

Sweet potato perfection: Toss with a touch of olive oil and onion powder before air-frying for extra flavor and crispness.
Taco shell magic: Warm tortillas in the air fryer on medium heat for 30 seconds for perfect pliability and warmth. If you don’t havean air fryer use a baking sheet in the oven.
Buffalo balance: Start with less sauce and add more to taste. Remember, you can always add heat, but can’t take it away!
Sauce savvy: Make your own ranch or bleu cheese dressing for extra control over flavor and ingredients.
Spice it up! Add a sprinkle of cayenne pepper, chili powder or crushed red pepper flakes for extra heat.
Add your favorite taco toppings: Add refried beans, pico de gallo, hot sauce, green chile or salsa verde on top.
How to make these lower carb?
A great way to make these Buffalo Air Fryer Chicken Tacos low carb or grain-free is by making them in lettuce wraps. For this option, feel free to use any lettuce or leafy green carrier you want! You can sub romaine, bib, or butter lettuce, endives or green leaf lettuce. You can even use cauliflower tortillas.

I like to warm my corn tortillas up in the oven at 350 for 2-4 minutes to get them warm and easy to work with! Warm tacos are the best tacos!
