This pulled BBQ Chicken Flatbread is one of my favorite pizzas! It is smothered with barbecue sauce, loaded with shredded chicken, cheddar cheese, mozzarella and red onion. It’s the perfect lunch, dinner or even cut up into smaller pieces to make the perfect bite size appetizer. This BBQ Chicken Flatbread is actually made on a gluten free french bread or baguette which makes for the perfect crisp pizza crust that’s ready in no time! You can be sure that it’s going to be a pizza that everyone will love and won’t be able to get enough of! It’ll be requested over and over again so get ready!

ingredients & substitutions
BBQ sauce
You can use any bbq sauce for this BBQ chicken flatbread. You can choose from regular standard traditional bbq sauce, carolina bbq sauce, low sugar bbq sauce, sugar free bbq sauce, basically any bbq sauce you want! My personal favorite is the carolina bbq sauce from trader joes or Sweet Baby Rays classic Barbecue Sauce! I have linked the sweet baby rays here:

Shredded chicken
You can either make your chicken in the crockpot and pull it afterwards to create the shredded chicken, or you can buy a rotisserie chicken from the grocery store and pull it yourself. If you live near a grocery store with a good prepared food section they might even sell already shredded chicken.
Red onion
This bbq chicken flatbread calls for diced red onion. You can sub sweet onions, white onions or any other onion you have. It will slightly change the flavor but hey, an onion is an onion! The key here is to dice up the onion as small as possible. You dont have to sautee the onions ahead of time, they’ll cook for long enough on the pizza itself. Plus, the onions are diced small so they will cook quicker!
Cheese
This recipe calls for a combination of cheddar cheese and mozzarella! You can use shredded cheese or buy a block of cheese and shred or slice it yourself. Other combinations you can try are mozzarella and blue cheese, mozzarella and gouda, cheddar and blue cheese. You can also use all cheddar cheese or all mozzarella cheese. Basically any cheese you want to pair with BBQ sauce works!
Gluten free baguette or french bread
To make this flatbread gluten free you need to make sure you buy a gluten free crust. This specific recipe uses a gluten free baguette, sliced down the center long-ways to make 2 long flatbreads. You can use italian bread, french bread, any type of long roll. I use Udi’s or Schars. I’ve linked them here:

Once the pizza is cooked, it is cut into 2″ slices to be able to make the perfect bite size appetizer!
Pizza nights are perfect for weeknight when you have a pre-made crust. I do love homemade pizza dough, but this easy alternative option saves you so much time on a weeknight. Another alternative option is to buy homemade dough from your local pizza shop. A lot of times whether you need regular pizza dough or gluten free pizza dough, your pizza shop will sell it to you without any toppings! Perfect for a make-your-own-pizza night. Either option allows you to not have to worry about making the dough, letting it rest, kneading it, waiting for the dough to rise or rolling out the dough. Its all fun to do, but now when you’re starving after school or work on a tuesday night!

how to make this vegan?
To make this bbq chicken flatbread vegan do the following:
- sub shredded jackfruit for the shredded chicken.
- use vegan cheese
- make sure the baguette is gluten free and vegan

taste & texture
This bbq chicken flatbread is crispy around the edges with gooey, melted cheese! The bottom of the crust and around the edges get crispy since it is baked at a high temperature. The cheese is melted around the chicken and smothered in bbq sauce for the perfect bite each time!

Directions
Step 1
Slice the baguette in half the long ways.
Step 2
Top with cheeses. You want the cheeese to be evenly distributed. You can shred it, slice it or even spread the softer cheeses evenly on the bread. Make sure to cover all edges. Next add the shredded chicken, bbq sauce and diced red onion.
Step 3
Add to a parchment lined baking sheet. Bake at 425 for 15-30 minutes until the edges are crispy and cheese is melted. I like mine to be crispy and browned around the edges and when the cheese in the middle has started to brown.
Step 4
Remove and let sit for 5 minutes before slicing into 3″ slices.

You can store left overs in the fridge for 3-5 days in an air tight container or in a zip lock bag. When ready to eat, pop into the oven, air fryer or a frying pan until it reaches a desired temperature or crispiness.
You can store in a freezer for up to 3 months also in an air tight container or in a zip lock bag. The same as when removing from the fridge, when removing from the freezer, pop into the oven on a baking sheet, air fryer or a frying pan until it reaches a desired temperature or crispiness.

how to serve & store
Serve right out of the oven! I love it hot and melty! Place it onto a cutting board, cut into desired size pieces (large for meals and small for appetizers or sharing!).
You can let it rest for 3-5 minutes if you want more of a room temperature flatbread that wont burn your mouth!
