All purpose gluten free flour blend: Use a store-bought blend with xanthan gum already in it for ease. Bob’s Red Mill 1-to-1 is a good option. I like to use a blend with oat flour for these gluten-free waffles. You can also look for a blend with white rice flour, almond flour, brown rice flour or coconut flour. Your local grocery store should have many options. Feel free to use all purpose flour or whole wheat flour if you are not gluten free. I love bobs red mill or king arthur brand.
Baking powder: Leavens the waffles, making them fluffy.
Cinnamon: Adds warm spice, but skip it if you prefer.
Coconut sugar: Sweetens naturally, but maple syrup or honey work too.
Dairy-free milk: Any kind of non-dairy milk or milk substitute, like cashew milk, unsweetened almond milk, rice milk, soy milk, acan of coconut milk, or oat milk.
