cassava flour – This vegan cornbread recipe uses cassava flour in place of wheat flour since it is naturally gluten free.
cornmeal – This make the vegan cornbread taste like a tradiitonal corn based bread. The cornmeal makes the cornbread gritty and gives the bread the right texture.
sugar or sugar substitute – The sugar gives this cornbread recipe a little sweetness. If you are watching your sugar intake you can use a sugar substitute or other sweetener!
baking powder – The baking powder is to help the vegan cornbread recipe rise and stay fluffy!
oat milk or plant based milk – The oil milk here is in place of dairy based milk to make sure this cornbread recipe is fully vegan.

vegan pepperjack cheese – This is my SECRET additonal to all my cornbreads. CHEESE! To keep this vegan cornbread recipe actually vegan, I use vegan cheese. Pepper jack cheese is my favorite. Its creamy and a little bit of spice to offset the sweetness. You can also use vegan cheddar cheese or vegan cream cheese.

This cornbread is sweet, but off set by the spicy cheese. This cornbread is unique because it has a cheesy flair to it. I like to cut up pieces of pepperjack cheese and add it to the batter before baking it so each bite is part of the sweet cornbread and part of the spicy cheese. Plus, this version of that uses vegan pepperjack cheese!
This cornbread is very moist, with the perfect kick of spice from the pepeprjack cheese. Its smooth and cake like in the center.

how to serve & store
I like to serve this vegan cornbread recipe as a side for thanksgiving, or christmas or any other cozy occassion like sunday night football or friendsgiving. I like to serve it with some vegan butter.
You can store this vegan cornbread recipe in the fridge for up to 3 days in an air tight container. Do not store on counter. Must refridgerate.
You can store in freezer in an air tight container for up to 3 months. To reheat this cornbread in the microwave for 60-90 seconds before eating.
