I love a cozy meal on a sunday night. This White Bean Chili is one of my husband’s favorites! It is packed with hearty white beans, tender shredded chicken and a thick creamy broth base. I love this White Bean Chili because it feels a bit lighter than a traditional chili recipe. My classic chili recipe has beef or turkey in it with a tomato base but this one is leaner and lighter… and it is also perfect for anyone who prefers a creamier chicken soup that is high protein.
White chicken chili is one of my favorites because it’s so easy to make. Basically just toss all the ingredient in a slow cooker or crockpot, set it and forget it! I love easy gluten free dinners for busy weeknights. This gluten free chicken chili makes great leftovers for lunch the next day. This white bean chili recipe is loaded with flavor, easy to make, and since it is packed with protein, it is super filling.

Yellow onion: The yellow onion adds a sweet and savory flavor to the white bean chili. White onions or red onions will work in a pinch!
Bell pepper: The bell pepper provides a vibrant color and a slightly sweet taste. I like the red peppers the best but you can use yellow, orange, green or even poblano peppers.
Chicken broth: Chicken broth provides a rich and flavorful base for the chili. Chicken stock or bone broth will work here too! You can use veggie broth for a vegan recipe.
Diced green chilies: Diced green chilies add a spicy kick to the chili. I like the ones from trader joes the best.
Cream cheese: Cream cheese adds a creamy texture and a mild flavor to the white bean chili. For a dairy free recipe, I use dairy free cream cheese. I have also used low fat cream cheese too!
Plain yogurt: For a dairy free recipe, I use dairy free yogurt.
Frozen corn: Frozen corn adds a sweet and slightly crunchy texture to the chili. You can use canned corn instead!
Cannellini beans or white beans: Cannellini beans provide a hearty and protein-packed texture to the chili.
Chicken breasts: Chicken breasts add a lean protein source to the gluten free chicken chili. You can leave it out for a vegan chili recipe.
Lime juice: Lime juice adds a bright and citrusy flavor to the gluten free white chicken chili.

Cover and cook on low for 6-8 hours, or on high for 3-4 hours.

Shred the chicken throughly.

expert tips & tricks
- You can save time by using rotisserie chicken to make it even faster! Instead of cooking the chicken in the crock pot you’ll just be heating all the ingredients up together.
- To make the white bean chili vegetarian or vegan, I just omit the chicken breast and use vegetable stock. I even add in more veggies to make it heartier.
- To make it spicier, add in an extra jalapeno or red pepper flakes.
- To make the gluten free chicken chili milder, I just add in less green chilis.

This Crockpot White Bean Chili recipe can be served with a side salad or a slice of garlic bread for dipping. I like to serve it hot, right when it is done. Plus, I’m usually really hungry by then!
To store, I let the gluten free chicken chili cool completely before refrigerating in an airtight container for up to 4 days.
For longer storage, I love to portion the white bean chili into freezer-safe containers and freeze for up to 2 months.
To meal prep the gluten free white chicken chili into individual portions, divide into separate containers. These individual portions are my favorite for great grab-and-go lunches or quick dinners during the week.

Ingredients
- 1 small yellow onion diced
- 1-2 bell pepper diced
- 2 cloves garlic minced
- 32 oz low-sodium chicken broth
- 1 can diced green chilies
- 1/2 cup cream cheese or dairy free sub
- 1/2 cup plain yogurt or dairy free sub
- 1 cup frozen corn
- 2 can cannellini beans 1 can blended
- 1 lb chicken breasts
- 1 Tbsp fresh lime juice
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp dried oregano
- 1/4 tsp cayenne pepper
- 1 tsp chili powder
Instructions
- Add all ingredients to the crockpot.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
