Crockpot White Bean Chili (Gluten Free)

White chicken chili is one of my favorites because it’s so easy to make. Basically just toss all the ingredient in a slow cooker or crockpot, set it and forget it! This gluten free chicken chili makes great leftovers for lunch the next day. This white bean chili recipe is loaded with flavor, easy to make, and since it is packed with protein, it is super filling.

- 1 yellow onion diced
- 1-2 bell pepper diced
- 2 cloves garlic minced
- 32 oz low-sodium chicken broth
- 1 can diced green chilies
- 1/2 cup low fat cream cheese or dairy free sub
- 1/2 cup fat free plain yogurt or dairy free sub
- 1 cup corn
- 2 can cannellini beans 1 can blended
- 1 lb chicken breasts
- 1 Tbsp lime juice
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp dried oregano
- 1/4 tsp cayenne pepper
- 1 tsp chili powder
Add all ingredients to the crockpot.
Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
Stir to make sure all ingredient are combined.
Shred the chicken throughly.
Serve hot with your favorite toppings, such as shredded cheese, sour cream, avocado, and tortilla chips.
