INGREDIENTS & SUBSTITUTIONS
If you don’t have vinegar you can make this recipe with only water.
You cannot sub egg whites or vegan eggs for this recipe.
TASTE & TEXTURE
These microwave poached eggs truly taste like traditional poached eggs. The microwave poached eggs are soft with a soft, gooey center. When cut in half they ooze out making them they perfect topping to a breakfast bowl or avocado toast.
For a less gooey texture, increase the cook time 30 seconds so the center of the egg is more cooked.
Make sure to carefully scoop the microwave poached eggs out of the water so they don’t break when you’re picking them up. They’re very delicate and you don’t want to yolk to break until its on the plate.
HOW TO MAKE
STEP 1
Mix together salt, water, and vinegar In a mug.
STEP 2
Crack an egg into the water.
STEP 3
Microwave for 90 seconds, covered.
EXPERT TIPS & TRICKS
Make sure to carefully scoop the microwave poached eggs out of the water so they don’t break when you’re picking them up. Microwave poached eggs are very delicate and you don’t want to yolk to break until its on the plate.

- Add in 30 second intervals if needed due to microwave differences.
Notes
Can I substitute egg whites or vegan eggs?
Unfortunately you cannot. The idea of the poached egg is to get the runny, gooey center which you can only get with the yolk!
Can I omit the vinegar?
You can but this recipe is created to make traditional poached eggs simpler and traditional poaches eggs use vinegar an you’ll want that flavor!
Can you cook 2 eggs at once?
I do not recommend. The water and cook time is measured for 1 egg only. To get 2 eggs you’ll have to repeat the recipe again. Its only another 90 seconds!
