It’s made with just a few simple ingredients, including vegan sausages, a bell pepper, an onion, tomato sauce, and tomato flavored rice or risotto.

    If you don’t have Italian peppers and onions vegan sausages you can use any flavor you want. Any vegan sausage will do! You can also use another type of vegan meat, such as ground meat substitute or just omit the sausage from this sausage and peppers dish.

    Bell Pepper

    If you don’t have a bell pepper, you can substitute another type of pepper, such as a green pepper, red pepper, or yellow pepper. You can also use zucchini or yellow squash as a substitute in this vegan sausage and peppers.

    Onion

    If you don’t have an onion, you can substitute a shallot or a leek as a substitute. You can also omit the onion altogether for this vegan sausage, peppers and rice casserole.

    Tomato Sauce

    If you don’t have tomato sauce, you can substitute canned tomatoes, crushed tomatoes, or tomato paste. You can also make your own tomato sauce by simmering fresh tomatoes with garlic, onion, and herbs for this vegan sausage and peppers.
