Vegan Sausage and Peppers

This easy vegan sausage and peppers is the perfect 30-minute weeknight meal. This vegan sausage and peppers is gluten free, vegan, dairy free, low fat, and can be easily made low carb. It's made with just a few simple ingredients, including vegan sausages, a bell pepper, an onion, tomato sauce, and tomato flavored rice or risotto.

- 4 Italian vegan sausages sliced
- 2 bell peppers diced
- 1 onion diced
- 2 cups tomato sauce
- 1 1/2 cups rice
Cook rice according to package directions. Set aside.
Preheat oven to 350 degrees F (175 degrees C).
In an oven safe large skillet, brown the vegan sausages over medium heat. Add the onion and bell pepper and cook until softened, about 5-10 minutes. Add to a 9×13 inch baking dish.
Stir in the tomato sauce and rice.
Bake for 20 minutes, or until the casserole is heated through and bubbly. Serve immediately.
