INGREDIENTS & SUBSTITUTIONS
Potatoes
This dairy free baked potato calls for medium sized yukon gold potatoes. I like them the best because theyre smaller do you can use more than one! If you don’t have these, can’t find theses or just don’t like them, you can use any type of potato you want. Feel free to use any type of sweet potato, yam, white potato, yellow poato. etc.

Milk/Plant based milk
For this Baked Potato recipe you can use any type of milk – but I use oat milk since it is dairy free, vegan and gluten free. You can sub regular dairy milk, almond milk, rice milk, or any other plant based milk instead. The measurement of the milk in the recipe will be the same no matter what type of milk you use. Make sure to use a dairy free or vegan milk to keep this recipe dairy free and vegan.
Baked Potato toppings:
Shredded vegan cheddar cheese
For these Vegan and dairy free Baked Potatos you can use any type of vegan cheese you want for the topping. I used shredded cheddar in this recipe since its easy to sprinkle on top and melts well. I’ve also remade it with shredded vegan mozzerella.
If you want these potatoes to be creamier you can mix in vegan creamy cheese. Vegan cream cheese will give it a texture as though you added a little bit of dairy cream. It will be softer and moist. If you use cream cheese you can mix it in at the same time as the milk so it melts and mixes with the potato. Make sure to use a dairy free or vegan cheese to keep this recipe dairy free and vegan.
Vegetables
This dairy free baked potato calls for red onions and broccoli but you can sub any loaded vegan baked potato toppings you want. See below for alternative vegan baked potato toppings.
Bacon Bits
Since this recipe is vegan, I used vegan bacon here. I cooked up some vegan bacon in the air fryer until it was crispy. Then, I crushed the vegan bacon up into bite size pieces.
You can choose to buy store-bought bacon bits that are alrady crumbeled. If you dont need to keep this recipe vegan you can also sub regular bacon bits or turkey bacon as well.

TASTE & TEXTURE
These Vegan baked potaotes are crispy on the outside and soft in the inside. You can stuff them with any of your favorite baked potato toppings! These dairy free baked potatoes are warm and cozy for a cold day. They also make a perfect party appetizer! To make them more appetizer appropriate you can use smaller potatoes, or cut the potatoes in half. The best appetizers are bite size so make sure the potatoes you use for an appetizer are small enough to finish in 1-2 bites!
HOW TO MAKE
DIRECTIONS
Step 1
Preheat oven to 425.
Step 2
Place loaded Vegan Baked Potato in a baking dish, and bake uncovered for 40-50 minutes until potatoes are soft and fully cooked. Set aside and let cool. Keep the oven on.
Step 3
Once the potatoes have cooled, scoop out the center and place extra fitting in a separate bowl. Place scooped potatoes shells back in the oven for 7-10 minutes.
Step 4
With the extra potato filling, add oat milk, salt, pepper and garlic. Mix together.
Remove potatoes from the oven, add extra filling and desired toppings such as vegan cheese, turkey bacon or broccoli.
Step 5
Bake again for another 10-15 minutes.
Remove Vegan and dairy free baked potaotes, top with ranch and chives!!
EXPERT TIPS & TRICKS
This loaded Vegan Baked Potato are great for a meal prep option as well. You can make as many baked potatos as you want and store them in an airtight container and warm them up by microwave until they are heated all the way through. I like to cover with a wet paper towel when microwaving so the Vegan baked potaotes stay moist and dont dry out.
If you need a dairy free baked potato but dont need it to be vegan, you can use any kind of lactose free cheese and lactose free milk. This will ensure your baked potato is dairy free without being vegan. You can also choose to top the potato with bacon bits, shredded bbq chicken or buffalo chicken! That way you can add a bit more protein to your day if you don’t need to keep this recipe vegan.
HOW TO SERVE & STORE
Leftovers of these Vegan baked potaotes can be stored in an airtight container in the fridge for up to 3 days.
Leftover loaded Vegan Baked Potatos for this recipe can be stored in an airtight container in the freezer for up to 3 months.
Reheat in the microwave, covered with a wet paper towel so they dont dry out! You can also reheat in the oven at 350 or the air fryer until the potatoes are hot all the way through. If you use the oven or air fryer, please note you will get some crispy edges!
Gluten Free Baked Potato (dairy free, vegan)
Ingredients
- 6 small potatoes
- 1/4 cup unsweetened plant-based milk such as almond or cashew milk
- Salt and pepper to taste
- Garlic powder to taste
- 1/4 cup vegan ranch dressing
- 3 slices vegan bacon crumbled
- 3 tablespoons chopped chives
- 1/4 cup shredded vegan cheddar cheese
Instructions
- Preheat oven to 425°F (220°C).
- Wash and pierce each potato with a fork a few times. Place them directly on the oven rack and bake for 40-50 minutes, or until tender when pierced with a fork.
- While the potatoes are baking, prepare the filling. In a bowl, combine plant-based milk, salt, pepper, and garlic powder to taste.
- Once the potatoes are cooked, let them cool slightly for a few minutes. Then, carefully cut each potato in half lengthwise and scoop out the flesh, leaving a thin border around the skin.
- Place the empty potato skins back on the baking sheet and return to the oven for 7-10 minutes to crisp up.
- Meanwhile, mash the scooped potato flesh with the prepared plant-based milk mixture.
- Remove the potato skins from the oven and fill them evenly with the mashed potato mixture.
- Top with your desired toppings, such as vegan bacon, chives, and vegan cheddar cheese.
- Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes, or until heated through and the desired level of crispness is achieved.
- Remove the potatoes from the oven and drizzle with vegan ranch dressing. Top with additional chives if desired.
