ingredients & substitutions
Lean ground turkey: This is one of my favorite lean proteins for making meatballs with. I prefer ground turkey instead of beef for a lighter weeknight meal. You can use ground chicken for a similar taste! I’ve made these before with turkey and chicken and they are just as good!
Breadcrumbs: These help bind the meatballs and give them body. I use gluten free seasoned breadcrumbs to make these homemade meatballs gluten free.
Egg: This acts as a binder to hold the homemade gluten free turkey meatballs together.
Mozzarella cheese cubes: This is the melty center. Provolone is similar and can be used too! This also adds a cheesy topping on the mozzarella stuffed meatballs. You can use shredded, sliced, or torn pieces of fresh mozzarella!

expert tips & tricks
- I always make sure not to over mix the meat mixture. I just softly mix the ingredients together with a wooden spoon until fully combined. This helps the meat stays juicy. Overmixing the meatballs will leave you with dry, tough meatballs….and no one wants that!!
- If you want a little kick, feel free to add some red pepper flakes or chili powder into the gluten free turkey meatballs mixture. You can also add any fresh or dried herbs for a flavor variation.
- I like to turn my gf turkey meatballs halfway through so that you get a crisp and crunchy outside on all sides. The crunch is my definitely my favorite part.
- I always use a cookie scoop to make sure all my gluten free turkey meatballs are the same size. This way I know they will take the same time to cook.
- When serving as an appetizer, I like to create smaller sized gf turkey meatballs! I also add toothpicks in them for easy serving.
serving, storing and meal prepping
These gluten free turkey meatballs are best served over pasta, rice or even on a sub sandwich with your favorite toppings!
To store the gluten free turkey meatballs, I let them cool completely before refrigerating in an airtight container for up to four days.
For longer storage, I freeze cooked gluten free meatballs in airtight containers. When freezing uncooked meatballs, I place them on a baking sheet first to prevent sticking. Remember to thaw frozen gf turkey meatballs completely before reheating in the oven or air fryer!
