30-Minute Gluten Free Turkey Meatballs with Cheese

Gluten free meatballs are so versatile. They are something I keep in my freezer at all times to make my weeknight dinners easier! Any hack to save time and I am in! These gluten free turkey meatballs are easy to make, ready in 30 minutes and freezer friendly! They are gluten free easy to make dairy free.

- 1 lb ground turkey or chicken
- 2 eggs
- 1 cup gluten free breadcrumbs
- 1 tbsp garlic powder
- 1/4 cup fat free ricotta cheese or dairy free substitute
- 8 oz mozzarella cheese or dairy free substitute
- 1 tbsp olive oil for drizzling
- 1 tsp cracked black pepper
Mix ground chicken, eggs, garlic, breadcrumbs, and ricotta.
Form mixture into balls, stuffing each with a mozzarella cube.
Add to an oven safe skillet and bake meatballs on 350 for 30-40 minutes or until cooked through.
Top with Parmesan, olive oil, and cracked black pepper.
Serve and enjoy!
