    This gluten free risotto with tomatoes is easy to make, takes 30 minutes and is made in just one pot. Yep! Its an easy one pan meal, which are hands down my favorite! This gluten free risotto is packed with garlic, tomatoes and fresh herbs. Think easy italian comfort food at its finest!

    This gluten free risotto with tomatoes is affordable...and cheaper than ordering in! I love a risotto from my favorite italian restaurant but its expensive! This Gluten free Risotto uses affordable ingredients. Plus, it is SUPER Easy to make. This easy italian recipe takes only 30 minutes but I used to think risotto required a ton of patience and time, just like my one pan gnocchi with pesto!

    I love easy weeknight dinner recipes with tomatoes, just like my one-pan gnocchi with tomato sauce, my one pan chicken and pasta casserole and my creamy tomato and spinach pasta bake.

    Is risotto gluten free?

    Yes! Traditional risotto or classic risotto is gluten free because it is technically a rice! The reason why I order it cautiously at a restaurant is because the add ins or sauce may not be gluten free. But obviously, this Gluten Free Risotto With Tomatoes recipe is gluten free!

    ingredients & substitutions

    Arborio rice: AKA risotto! A short-grain rice variety known for its creamy texture when cooked.

    Shallots and garlic: Provide a base of flavor for the risotto.

    Bone broth: Adds depth of flavor and helps to cook the rice. Any broth or stock will do!

    Tomato sauce: Provides a tangy and slightly sweet sauce for the Gluten Free Risotto With Tomatoes. I like to use the garlic tomato sauce from raos but you can use any sauce you’d like. Just do a double check and make sure it is gluten free!

    Fresh mozzarella: Adds creaminess! I use fresh mozzarella but shredded mozzarella is great to use too. I like to use dairy free mozzarella when I want a dairy free recipe.

    Fresh basil: Provides a bright, herby flavor to the gluten free risotto. You can use parsley or oregano instead.

    Step 1

    Heat bone broth in a saucepan.

    Step 2

    Sauté shallots and garlic in olive oil until softened.

    Add risotto rice and toast for 5 minutes.

    Step 4

    Gradually stir in hot broth, 1/2 cup at a time, letting rice absorb before adding more. This should take approx 20-25 minutes.

    Once rice is nearly cooked, stir in tomato sauce. Season with salt and pepper.

    expert tips & tricks

    • Risotto is like rice, it doesn’t have a ton of flavor. The first steps are important to get the rice toasted and give it more flavor. Don’t skip that part. Similarly, you want to make sure to use a broth or stock when cooking and not water. This will help give it more taste as well. No one wants bland risotto.
    • Don’t want to walk away from the risotto as it cooks! This is people’s biggest downfall when making risotto. Risotto can quickly burn and stick to the pot if it is left alone without enough liquid. I like to slowly add a little bit of liquid at a time. As soon as the rice absorbs the liquid, I add more. I keep doing this until the risotto is the consistency I want. This cooking process takes time.
    • Patience is the most important skill needed when making creamy risotto…I had to learn this the hard way! The cooking time for risotto is somewhere between 20 -30 minutes. This is not rice, you can’t just set it and forget it.
    • You also NEED to constantly stir the risotto. You want to keep it from sticking and burning at the bottom of the pot. No one wants burnt Gluten Free Risotto.
    • I always have extra broth on hand in case I need it.

    I serve the Gluten Free Risotto With Tomatoes immediately while it’s hot and creamy! I like to top it with grated Parmesan cheese or a drizzle of high-quality olive oil, salt and pepper. Make sure to add fresh herbs for presentation and taste.

    Leftovers of the Gluten Free Risotto With Tomatoes can be stored in an airtight container in the refrigerator for up to 2 days. However, risotto tends to become quite dry when reheated. To prevent this, I add a splash of broth or water and heat gently in a saucepan or microwave.
