Gluten Free Risotto With Tomatoes

This gluten free risotto with tomatoes is easy to make, takes 30 minutes and is made in just one pot. Yep! Its an easy one pan meal, which are hands down my favorite! I love a risotto from my favorite italian restaurant but its expensive! This Gluten free Risotto uses affordable ingredients. Plus, it is SUPER Easy to make. This risotto takes only 30 minutes but I used to think risotto required a ton of patience and time.

- 2 cups Arborio rice
- 1 tbsp olive oil
- 2 shallots minced
- 2 tbsp garlic minced
- 4 cups bone broth or broth of choice
- 1 jar tomato sauce
- 1/2 cup mozzarella or dairy-free cheese
- 2 tbsp fresh basil chopped
Heat bone broth in a saucepan.
Sauté shallots and garlic in olive oil until softened.
Add risotto rice and toast for 5 minutes.
Gradually stir in hot broth, 1/2 cup at a time, letting rice absorb before adding more. This should take approx 20-25 minutes.
Once rice is nearly cooked, stir in tomato sauce.
Season with salt and pepper.
Remove from heat.
Top with basil and cheese.
