    I love a gluten free dessert recipe that doesn’t taste gluten free. These gluten free oatmeal chocolate chip bars are a bar version of traditional oatmeal chocolate chip cookies. Oatmeal chocolate chip cookies take time to make, especially scooping out the cookie dough. So to save time, but get that same classic oatmeal chocolate chip flavor, these one bowl cookie bars are the perfect solution!

    Protein Powder: Adds protein and flavor to the Gluten Free Oatmeal Chocolate Chip Bars. I always have trouble hitting my daily protein goal so using protein powder helps me get closer to the goal! I prefer a chocolate, or peanut butter flavor but any flavor will work. If you don’t have protein powder use gluten free flour or more gluten free oats.

    Gluten-Free Oats: Base for the oatmeal bars. I always check to make sure the oats I use are certified gluten-free.

    Nut Butter: Binds everything together and adds richness without using butter or eggs. I always use peanut butter. Any nut butter works! You can even use sunflower seed butter or tahini for a nut-free option.

    Mashed Bananas: Sweeten the Gluten Free Oatmeal Chocolate Chip Bars naturally. Have overripe bananas laying around? This is the perfect recipe to use them in!

    Step 1

    In a large bowl, mix together all the ingredients.

    Add to lined loaf pan.

    Step 3

    Bake the Gluten Free Oatmeal Chocolate Chip Bars at 350 for 30 minutes. Add chocolate chips on top if desired.

    • For dairy free Gluten Free Oatmeal Chocolate Chip Bars, I like to use dairy free chocolate chips.
    • To make vegan oatmeal bars, use a vegan protein powder and vegan chocolate chips.
    • If you don’t have a loaf pan, you can also double the recipe and bake in an 8×8 or 9×9 brownie pan.
    • Line the pan with parchment paper. This makes for easy removal and easy clean up! I hate doing dishes so this is my ideal baking method!
    • Let the oatmeal bars cool completely before cutting.  Cooled Gluten Free Oatmeal Bars cut easier and cleaner than ones right out of the oven. Right out of the oven they are softer, melted and don’t hold their shape as well.

    how to serve, store and meal prep

    Slice cooled gluten free Gluten Free Oatmeal Chocolate Chip Bars into squares. I like to enjoy them warm from the oven or at room temperature. If I store them in the fridge, I microwave them for 30 seconds before eating.

    I store leftover Gluten Free Oatmeal Bars in an airtight container in the fridge for 5 days. For longer storage, I freeze individual oatmeal bars in freezer safe bags or a freezer safe containers for up to 3 months.

    Thaw frozen Gluten Free Oatmeal Chocolate Chip Bars in the fridge overnight or reheat briefly in the microwave for a warm treat.
