I love nothing more than a holiday morning breakfast casserole. Waking up to the smell of a cozy egg bake with ham will get me out of bed way faster than an alarm any day. Truthfully, I’ll ignore the alarm as long as I can…but the smell of breakfast recipe? I’m definitely not ignoring that! This ham and egg bake is perfect for a holiday brunch, a weekend breakfast or even a breakfast meal prep to make your weekday mornings easier.

ingredients & substitutions
Ham: I prefer thin slices of cooked ham or leftover ham from a holiday, or I buy deli ham!
Gluten-Free Rolls: Any kind of gluten-free dinner rolls will work in this Egg bake with Ham. I like the size of dinner rolls the best for the size of the casserole but you can use any kind of gluten free white bread, gluten free bagels or gluten free baguettes.
Eggs and Egg Whites: This is the base of the dish! I use all eggwhites when I want a lean casserole and a mix between whole eggs and egg whites when preparing it normally. Both are super delicious.
Oat Milk: I like to oat milk in this gluten free egg bake. This keeps the eggs nice and fluffy. I’ve been adding milk to my eggs to keep them fluffy since I was a kid! You can also use yogurt instead in this ham and egg bake.
Shredded Cheddar Cheese: Whats a ham, egg and cheese without any cheese? I love using cheeddar cheese or american cheese. If I want to make a dairy free breakfast Egg bake with Ham I use dairy free cheese instead.

Step 1
Pre heat oven to 375°F (190°C). Grease a baking dish.
Step 2
Cut the gluten-free rolls into quarters. Arrange the roll pieces evenly in the prepared baking dish at the bottom of the pan.
Step 3
Fold the ham slices delicately around the roll pieces, creating little pockets.
Step 4
In a large mixing bowl, whisk together the eggs, egg whites, milk, and garlic and herb seasoning. Season with sea salt and black pepper to taste (optional). Whisk together in the large bowl so the egg yolks are all scrambeled.
Step 5
Pour egg mixture evenly over the ham and roll arrangement in the baking dish.
Step 6
Sprinkle the shredded cheese on top of the Egg Bake With Ham.
Step 7
Bake the gluten free egg bake for 30-35 minutes, or until the eggs are set and the cheese is melted and bubbly.
expert tips & tricks
- If your rolls are on the dry side, soak them in a little bit of milk before adding them to the baking dish. This will help them absorb the egg mixture and become soft.
- Feel free to add other vegetables to the Egg bake with Ham, like chopped red bell pepper, chopped green pepper, onions, or spinach. Saute them lightly before adding them to the baking dish.
- Top the ham and egg bake with sour cream, green onions or hot sauce for more flavor!
serving, storing and meal prepping
I like to let the ham and egg casserole cool slightly before serving. I slice it into squares and enjoy it warm. To store leftovers, I pop into the fridge in an airtight container or cover the breakfast bake with aluminum foil for up to 3 days. Then, the next morning, I reheat slices of the ham and egg casserole in the microwave or oven.
To freeze, cool the Egg Bake With Ham completely. Then, I slice and wrap portions in foil or plastic wrap. Frozen slices will last for 2-3 months. I reheat slices in the microwave or oven until heated through.
For meal prep, I assemble the Egg bake with Ham in a muffin tin instead of a baking dish. Then I portion the egg bake into individual containers or bags for an easy breakfast when I am on the go.

- 1/4 cup milk or oat milk
- 2-3 tbsp garlic and herb seasoning
- 1 cup shredded cheese or vegan shreds
