This quick bread uses pancake mix as the base, making it incredibly easy to throw together with just a few simple ingredients. Plus, the mashed bananas and applesauce add natural sweetness and moisture, while the optional mix-ins like berries and nuts allow you to customize the flavor and texture to your liking.
This recipe is gluten free, dairy free and egg free. It also does not use oil so it is oil free as well, just like my gluten free 5 ingredient banana bread!

Gluten-free pancake mix: Store-bought pancake mix is the base of the Bread from Pancake Mix. It has gluten free flour, leavening agents (like baking powder) to make it rise, and a bit of sweetness. You can use a regular pancake mix with purpose flour if you don’t need it to be gluten-free. You can use your favorite pancake mix. I would not reccomend a “just add water” mix. I used the trader joes gluten free pancake mix bought at my local trader joe location. There are so many good gluten free pancake mixes on the market.
Plant-based milk: This adds moisture and richness. Any type works – almond milk, soy milk, oat milk, etc. You can use regular milk, skim milk or low-fat milk if you do not need it to be dairy free. You can also sub dairy free greek yogurt as well.
Mashed bananas: These add natural sweetness and a soft texture. Overripe or ripe bananas bananas are best for this. You can use an equal amount of pumpkin puree instead.
Applesauce: This adds more sweetness and moisture. You can also substitute the same amount of yogurt.

This Bread from Pancake Mix has a sweet, slightly spiced flavor from the pancake mix and a hint of fruitiness from the bananas. It has a fluffy texture. It is moist, with a bit of density from the pancake mix. If you add berries, you’ll get a burst of juicy sweetness in some bites. Nuts will add a nice crunch throughout the pancake mix banana bread. Overall, it’s a simple and satisfying treat!
how to make
- Preheat your oven to 350°F (175°C) preheated oven.
- Grease or line mini loaf pans. You can use cooking spray, vegan butter, or parchment paper for this step.
- In a large bowl or medium bowl, combine the gluten-free pancake mix with the wet ingredients: plant-based milk, mashed bananas, and applesauce. Mix well until everything is fully incorporated.
- Optional: Add your desired mix-ins, such as berries or nuts, to the batter at this point. Gently fold them in with a spatula.
- Fill the prepared mini loaf pans 1/2 to 3/4 full with the batter. You can also use a 9×5 prepared loaf pan but you will need to bake for longer.
- Bake for 20-30 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- Let the banana bread cool in the pans for a few minutes before transferring them to a wire rack to cool completely.

You can choose to add any kind of mix-ins including diced apples, blueberries, chocolate chips, nuts, etc to this banana bread recipe. This is a fun way to make this breakfast classic your own.
Also, you can slice the Dairy free, gluten free banana bread from pancake mix in half and add melted butter vegan butter, cream cheese, maple syrup before serving.
You can also use a regular loaf pan for this recipe. Adjust the baking time accordingly, checking for doneness at around 50-60 minutes.
Add some brown sugar on top for a fun brown sugar bread flavor.
