This Bread from Pancake Mix is a great breakfast for busy mornings or when you're looking for a quick and satisfying snack. This quick bread uses pancake mix as the base, making it incredibly easy to throw together with just a few simple ingredients. Plus, the mashed bananas and applesauce add natural sweetness and moisture, while the optional mix-ins like berries and nuts allow you to customize the flavor and texture to your liking.

- 2 cups gluten free pancake mix
- 2/3 cup plant based milk
- 2 mashed bananas
- 1/2 cup applesauce
Preheat your oven to 350°F (175°C).
Grease or line mini loaf pans. You can use cooking spray, vegan butter, or parchment paper for this step.
In a large bowl, combine the gluten-free pancake mix, plant-based milk, mashed bananas, and applesauce. Mix well until everything is fully incorporated.
Optional: Add your desired mix-ins, such as berries or nuts, to the batter at this point. Gently fold them in with a spatula.
Fill the prepared mini loaf pans 1/2 to 3/4 full with the batter.
Bake for 20-30 minutes, or until a toothpick inserted into the center comes out clean.
Let the banana bread cool in the pans for a few minutes before transferring them to a wire rack to cool completely.
