To me, the easiest recipes to make gluten free are mexican recipes! So many mexican dishes are made with corn tortillas! What could be easier than corn tortilla tacos!? If you didn’t know, corn tortillas are naturally gluten free and dairy free! Plus they are perfect to make Air fryer tacos out of!
These air fryer tacos are packed with leftover pulled pork, peppers and onions! You can use any left over shredded pork from a pot roast or any other roasted pork dish! These gluten free tacos are made with corn tortillas so they are a naturally gluten free dinner recipe, and contain no cheese… so they are dairy free too!
This gluten free taco recipe comes together quickly, requires minimal cleanup, and is perfect for a quick weeknight dinner, just like my one pan easy shrimp creole recipe. It comes together in under 15 minutes, just like my gluten free BBQ chicken tacos.

Taco Seasoning: Option to season the shredded pork or juicy chicken with homemade taco seasoning mix. I like the old el paso brand. You can make your own by comining onion powder, chili powder, garlic powder, black pepper and sea salt.
Shredded Pork: I love using leftovers to make this air fryer taco recipe easier! The easier the better! Leftover pulled pork, shredded pork shoulder roast, pot roast, or even ground pork can all be used in this recipe. If you don’t have any leftover pulled pork, feel free to use shredded chicken or a rotisserie chicken.
Bell Pepper and Onion: Any color bell peppers will work as well as any onions! Red onion, white onion, yellow onion, etc! Use your favorites. If you don’t have fresh peppers or onions, use a cup of frozen mixed peppers and onions.
Corn Tortillas: These dairy free tacos are made on corn tortillas which are naturally gluten free! It makes my life so much easier! Corn tortillas always work better when they are heated up. Make sure to let the air fryer tacos bake for a few minutes before folding them in half so your tortillas don’t crack!

- On a cutting board, slice the pepper and onion into thin slices.
- Add the peppers and onions to the air fryer and cook on 390 for 5-8 mintues or until peppers and onions are soft and edges are charred.
- Warm the corn tortillas in the microwave or air fryer and heat for a few minutes until pliable.
- Place a spoonful of sauteed vegetables on each tortilla, top with shredded pork, and fold over. Spray the corn tortilla shells with olive oil spray for a crispier finish.
- Place the assembled air fryer tacos on an air fryer baking sheet and air fry at 400°F for 5-7 minutes, or until the tortillas are golden brown. Option to bake in the oven if needed on a parchment lined baking sheet.
- Enjoy your crispy gluten free tacos immediately with your favorite taco toppings.
expert tips & tricks
- I like to serve the gluten free tacos with my favorite dipping sauces like salsa or enchilada sauce or taco sauce. If you do not have, mix together a can of tomato sauce with homemade taco seasoning.
- Swap the meat out for grilled white fish for easy fish tacos. I use gluten free fish sticks for easy gluten free fish tacos.
- Use small corn tortillas for crispy mini air fryer tacos.
- I love to add my favorite taco toppings like lime juice, fresh cilantro, oaxaca cheese or cheddar cheese and refried beans or black beans for an upgrade. I love fresh lime juice on top!
- Use dairy-free toppings like salsa, avocado, and cilantro to make the tacos dairy-free as well. I love this option when I don’t want to take a lactaid.
- Make these gluten free tacos into taco bowls by skipping the shells, adding white rice, all the ingredients to a medium bowl and top with crushed tortilla chips for a good crunch.
how to serve, store and meal prep
For storage in the refrigerator, I allow the gluten free tacos to cool completely. Then, I wrap each taco individually in aluminum foil or plastic wrap. I store the wrapped tacos in an airtight container in the refrigerator for up to 3 days.
To reheat, preheat your oven or toaster oven to 350°F. I then unwrap the air fryer tacos with pork and place them on a baking sheet. I heat for 5-7 minutes, or until warmed through and crispy.
When storing in the freezer, place the wrapped gluten free tacos in a freezer-safe bag or container. I freeze for up to 3 months.
To reheat from frozen, Thaw the frozen air fryer tacos overnight in the refrigerator. Then, I heat in the oven or air fryer until warm.
To Meal Prep for Individual Portions, I like to double or triple the gluten free taco recipe to make a large batch of tacos.

- Top with low-carb vegetables: I like to add toppings like lettuce, tomato, avocado, and salsa for a low-carb and flavorful taco experience.
- When shredding the pork, trim any visible fat from the pork before shredding it will decrease the overall fat content.
- Choose low-fat toppings: Opt for low-fat toppings like salsa, pico de gallo, and light sour cream to keep the crispy Air fryer tacos content low. Use less oil.
- Substitute lwo carb tortillas: I like to replace the corn tortillas with low-carb tortillas made with cauliflower or coconut flour. These are readily available in most grocery stores or online.
- Choose lean pork: Opt for a lean cut of pork like pork tenderloin or sirloin to reduce the fat content.
