Hands down, these are the absolutely best and easiest Butterscotch Chocolate Chip Cookies! They take 5 minutes to prepare, 10 minutes to bake and are a quick, one bowl recipe. You do not need to chill the dough before baking. You do not need to melt any butter, or fold in any butter… Literally these cookies are thrown together in one bowl and you’re all set.
ingredients & substitutions
For this Butterscotch Chocolate Chip Cookies recipe, buy organic peanut butter that is just ground peanuts and salt. I specifically look for peanut butter that does not contain oil, although sometimes if i can’t find that I use natural Jif.
Any peanut butter will work for these peanut butter chocolate covered pretzels.

This peanut butter cookies recipe uses brown sugar to sweeten it. You can use a brown sugar substitute to keep the flavor and texture the same. Another option is to use a white granular sugar free or coconut sugar. Keep in mind, this substitute it may change the texture/taste slightly.

The cocoa powder is used to add the chocolate flavor to the gluten free peanut butter cookies without any extra oil or butter or fat!
Gluten free flour
For this recipe I used a 1:1 gluten free flour blend. Cup 4 cup and bob’s red mill both offer 1:1 substitutes that you can use in place of wheat flour without changing the amount. This recipe works with wheat flour too but to keep it gluten free use the 1:1 gluten free flour blend! I have not tried this recipe with oat flour, coconut flour, almond flour or any other nut flour.
Chocolate chunks (or chocolate chips) and butterscotch chips
I like to use dark chocolate chunks and butterscotch chips for these gluten free cookies but feel free to choose from chocolate chips, semi sweet chips, milk chocolate chips, white chocolate chips, etc.
