I love burrito. These Air Fryer Burritos are easy to make and VERY customizable. You can make them vegetarian or add meat if you want! Air Frying them is super easy and makes very little mess. So if you’re like me and hate cleaning up after a meal, this is the recipe for you!

What is a burrito?
The burrito is a typical Mexican food, also classic mexican street food. It is on almost every mexican restaurant menu I’ve been to and is also a staple of Tex-Mex cuisine. It mainly is created from a tortilla, filled with mexican ingredients and then rolled and warmed.

- It’s an easy freezer friendly meal, which means it is a great option for a meal prep lunches or dinners! I love to have it ready to go when I need to just pull a dinner out of the freezer and heat it up quick.

Ingredients & Substitutions
Meat: The classic, traditional burritos are made with meat, but of course you can make them vegetarian or vegan if you prefer! To add meat, I would add shredded chicken, ground chicken, ground turkey or ground beef!
Gluten-free tortillas: These are the base for the Air Fryer Burritos; you can substitute with large lettuce leaves for a low-carb option.
Bell peppers: You can use any veggies such as zucchini, mushrooms, or any veggies you have on hand!
Onion: Red, white, or yellow onions all work, or try shallots for a milder flavor.
Rice: quinoa, cauliflower rice, or brown rice all work the same if you don’t like white rice.
Corn: frozen, canned, or fresh all work in these Air Fryer Burritos!
Black beans: pinto beans, kidney beans, or refried beans all work!
Cheddar cheese: use dairy-free cheese for a vegan option. Shredded to sliced cheese both work.

How do I make this recipe?
Sauté the veggies: In a skillet, I cook sliced peppers and onions over medium heat until soft and caramelized, about 10 minutes.
Cook the rice: I prepare 1½ cups of your favorite rice (white, brown, or even cauliflower rice works!).
Warm the tortillas: I microwave each gluten-free tortilla for 30 seconds to make folding easier.

Assemble the Air Fryer Burritos: Next, I layer rice, sautéed veggies, corn, and black beans in the center of each tortilla. Sprinkle with cheddar cheese.

Fold & air fry: I roll up the Air Fryer Burritos and place them seam-side down in your air fryer basket. I air fry at 350°F for 8–12 minutes, or until crispy and golden.


Expert Tips & Tricks
Don’t overfill the burrito! Overfilling the Air Fryer Burritos with too much stuffing makes it hard to wrap and risks the wrap ripping or breaking.

How do you keep burritos from getting soggy?
The rice, veggies and all other ingredients should be cold when added into the tortilla.
Can you air fry frozen burritos?
Yes! If you meal prep these Air Fryer Burritos and want to reheat, you can add them straight to the air fryer frozen. I would wrap them in tin foil for the first 7-10 minutes while it defrosts, then remove the foil to let the outside get crispy.

Should I Wrap My Burritos in Foil When Air Frying?
I do not and this Air Fryer Burritos recipe doesn’t require you to. But, ff you prefer a soft burrito you can! If you want a super crispy burrito with crispy edges, I would not wrap in foil.
Can I Make Air Fryer Burritos Ahead of Time?
Yes! Definitely. These Air Fryer Burritos are perfect for meal prep! To meal prep into individual portions, divide into separate containers. These individual portions are my favorite for great grab-and-go lunches or quick dinners during the week.
How Do I Serve the Air Fryer Burritos?
You can serve these air fryer burritos with guacamole, sour cream, salsa or any other sauces like queso!

How do I Store and Meal Prep these Air Fryer Burritos?
To store these gluten free Burritos, I let it cool completely before refrigerating in an airtight container for up to four days.
For longer storage, I love to portion these Air Fryer Burritos into freezer-safe containers and freeze for up to 2 months.
