    This smashed avocado on toast could not get any easier…or more delicious! The gluten free bread is toasted and topped with ripe mashed avocado and a poached egg! It is seasoned with salt, pepper and parsley.

    WHY YOU’LL LOVE THIS RECIPE

    I didn’t discover avocado toast until my adult life, and boy was I missing out. Plus there are so many topping combinations to use, you’ll never run out of ideas.

    smashed avocado on toast is a healthy option for breakfast, lunch or even a mid day snack. It is packed with healthy fats and you can top it with any vegetables or leafy greens you like! It is super simple to throw together. You can make this smashed avocado on toast at home, or bring the ingredients to work and throw it together there! It is an easy on-the-go recipe!

    INGREDIENTS & SUBSTITUTIONS

    For the base of this smashed avocado on toastt you really only need 4 ingredients: avocado, poached egg, cream cheese and gluten free english muffin.

    GLUTEN FREE BREAD

    Avocado toast is best on crisp toast instead of soft bread. You want the crunch of the toast to offset the softness of the avocado.

    As we know, finding good gluten free bread is hard. I’ve listed my favorites for you below to help cut down the time of you perfect-bread search!

    AVOCADO

    Avocado is the “meat” of these gluten free avocado toast. It gives the gluten free avocado toast the flavor and texture you want and is packed with healthy fats.

    You want to make sure your avocados are ripe.

    HOW TO CHECK IF AN AVOCADO IS RIPE?

    You want to lightly squeeze the avocado in your hand. If you can gentle feel it giving and it is a little soft, its likely ripe. The skin should be dark in color.

    If the avocado is rock solid hard or green in color it is not ready yet.

    CREAM CHEESE

    I used my own vegan cream cheese recipe to make sure this smashed avocado on toast is dairy free. CLICK HERE FOR THE RECIPE. You can use any cream cheese you want. You can make your own, buy regular, get some from your local bagel shop!

    Use any version of cream cheese. I have used vegetable cream cheese, whipped cream cheese, chive cream cheese, etc.

    POACHED EGG

    These microwave poached eggs are fool proof! Theyre incredibly easy to make even if this is your first time poaching eggs. Theres little to no clean up. You’re only 9 seconds away from healthy 90 second microwave poached egg breakfast.

    1. Mix together salt, water, and vinegar In a mug.
    2. Crack an egg into the water.
    3. Microwave for 90 seconds, covered.

    TASTE & TEXTURE

    This smashed avocado on toast is packed with fresh flavors. The avocado is soft and smooth, while the bread is toasted and crispy. I like to add a drizzle of oil to my smashed avocado on toast to give it extra flavor. I always season my avocado toast with salt and pepper for a seasoned taste.

    DIRECTIONS

    STEP 1

    Toast the slices of gluten free bread in a toaster until golden brown.

    STEP 2

    Slice your avocado in half. Remove half from the skin and mash on a cutting board.

    STEP 3

    Spread the cream cheese first, then add the mashed avocado onto the slices of bread.

    STEP 4

    Top with poached egg and enjoy!

    EXPERT TIPS & TRICKS

    HOW TO MAKE THIS LOWER IN FAT?

    To make this avocado toast lower in fat use fat free feta! You don’t want to miss out on the chese heres so this is the easiest substitute!

    HOW TO MAKE THIS VEGAN?

    To make this vegan use vegan feta! You don’t want to miss out on the chese heres so this is the easiest substitute!

    OTHER TOPPING COMBINATIONS

    CHIPOTLE AVOCADO TOAST:

    Avocado + tomatoes + feta + chipotle mayo

    BUFFALO AVOCADO TOAST:

    Avocado + tomatoes + shredded cheddar + buffalo sauce drizzle

    EVERYTHING BAGEL AVOCADO TOAST:

    cream cheese + Avocado + feta + everything bagel seasoning

    HERB AVOCADO TOAST:

    Avocado + parsley + oregano + garlic + basil + salt + pepper + arugula + olive oil

    BREAKFAST AVOCADO TOAST:

    Avocado + a fried egg + cheddar cheese + bacon crumbles

    CAPRESE AVOCADO TOAST:

    Avocado + tomato + mozzarella + olive oil drizzle + salt + pepper

    PARMESAN AVOCADO TOAST:

    Avocado + parmesan cheese + salt + pepper + garlic + arugula + olive oil drizzle

    SPICY AND SWEET AVOCADO TOAST:

    Avocado + arugula + pine nuts + red pepper flakes + hot honey + olive oil drizzle

    GREEK AVOCADO TOAST:

    Avocado + tomato + cucumber + garlic hummus + pine nuts + feta + olive oil drizzle + salt + pepper

    HOW TO SERVE & STORE:

    You’ll want to eat the smashed avocado on toast immidately after you make them or else why will get mushy and will not taste as fresh!
