I’ve use those sweet potatoes in one-pan skillet meals, tacos, salads and sheet pan meals, but this One-Pan Chicken Sweet Potato Recipe is hands down my favorite.
This easy and simple One-Pan Chicken Sweet Potato Recipe is everything you want in a cozy Fall dinner. This recipe is a one pan meal, takes about 30 minutes to make and is bursting with bold flavors!

Sweet potatoes: You can use anything from Gold potatoes to butternut squash or even pumpkin in these chicken sweet potato bowls! They are seasoned with olive oil, cumin, honey, garlic, salt, and pepper. If you want to switch up any of these seasonings feel free! I also like to use taco seasoning, fajita seasoning, or a garlic and herb seasoning!
Black beans: These versatile beans can be substituted with other legumes like kidney beans or pinto beans in this One Pan Chicken recipe.
Shredded chicken: This lean protein can be replaced with other cooked proteins like ground turkey or steak slices. Check out this one pan sweet potato and steak skillet recipe! Both are delicious so I which ever protein I have!
Poblano peppers: These mild peppers can be substituted with other peppers like bell peppers or you can make the Chicken Sweet Potato Recipe spicer with jalapenos.

Step 1
Preheat your oven to 425°F (220°C).
Step 2
Toss the sweet potato wedges with olive oil, cumin, honey, garlic, salt, and pepper.
Place the sweet potatoes in an oven safe skillet or cast iron skillet and roast for 30 minutes, or until tender and slightly golden brown.
Step 3
Once potatoes are done. Remove and add the poblano peppers. bake for 10-15 minutes, or until slightly softened.
Step 4
Add back the sweet potatoes. Add in the black bea and shredded chicken. Reduce the temperature to 375°F (190°C).
Step 5
Return the skillet to the oven and bake for an additional 5-10 minutes, or until heated through.
Step 6
Serve the chicken sweet potato bake immediately, topped with sour cream, cilantro, and lime wedges, if desired.
expert tips & tricks
- Add any other of your favorite toppings such as green chiles, red onion on top of the Chicken Sweet Potato Recipe. I also love adding hot sauce, sour cream or lime juice. If you are not dairy free you can add cheddar cheese too!
- You can adjust the spiciness by adding more pepper or using a topping like salsa, hot sauce or tomato paste seasoned with red pepper flakes.
- You can cook this easy recipe in the instapot, crockpot or slow cooker but the cooking time will vary.
- You can also make this One Pan Chicken in a non-stick skillet on the stovetop. Cooking time will vary.
serving, storing and meal prepping
This One Pan Chicken Sweet Potato Recipe can be served on its own or even with a side salad. I like to serve it hot right out of the oven for the freshest taste.
To store, I let the One Pan Chicken cool completely before refrigerating in an airtight container for up to 4 days.
For longer storage, I love to portion into freezer-safe containers and freeze for up to 2 months.
To meal prep the Chicken Sweet Potato Recipe into individual portions, divide into separate containers. These individual chicken sweet potato bowls are my favorite for great grab-and-go lunches or quick dinners during the week.

Ingredients
- 2 large sweet potatoes peeled and cut into 1/2-inch wedges
- 1 tbsp honey
- 1/2 tbsp cumin
- 1/2 tbsp garlic powder
- 2 tablespoons olive oil
- 1 cup cooked black beans rinsed and drained
- 2 cups shredded cooked chicken
- 1 poblano pepper seeded and diced
- 1/2 cup sour cream or dairy-free sour cream
- Salt and freshly ground black pepper to taste
- Optional toppings: cilantro, lime wedges, sour cream or dairy free sub
