Spinach Banana Green Pancakes for Halloween (gluten free)

If you didnt know that you could make easy spinach banana green pancakes then this recipe is about to blow your mind. These green pancakes are a perfect healthy breakfast with the taste of pancakes but the nutritional benefits of spinach and bananas! All you need is bananas, fresh spinach, eggs, gluten free flour and baking soda.

I love to make these spinach banana green pancakes any time I’m cooking for a green-themed party or holiday. I like to to serve these for breakfast on halloween with some little candie eyes, St. Patrick’s Day, Easter, or any random weekend when I’m looking for a little bit healthier of a breakfast.

You can serve these spinach banana green pancakes with sugar free maple syrup, vegan chocolate chips or even lite cool whip! You can make a bowl of fruit salad on the side. Even top them with cool whip and red and green sprinkles for the holidays!

I love how these spinach banana green pancakes are to make. You just pop all the ingredients in a food processor or blender, and you don’t even have to dirty a spoon.

ingredients & substitutions

  • eggs
  • gluten free flour – For this spinach banana green pancakes recipe I used a 1:1 gluten free flour blend. Cup 4 cup and bob’s red mill both offer 1:1 substitutes that you can use in place of wheat flour without changing the amount. This recipe works with wheat flour too but to keep it gluten free use the 1:1 gluten free flour blend! I have not tried this recipe with oat flour, coconut flour, almond flour or any other nut flour.
  • bananas + spinach – for some extra nutrients and vitamins. You add a handful of fresh spinach and 2 full bananas. The bananas can be green, yellow or even super ripe with patches of brown. Any type of bananas will work here.
  • baking soda – make sure to add baking soda so these puff up like traditional pancakes and they arent just flat on the plate!
  • green food coloring (optional) – this is to make them extra green!

These spinach banana green pancakes are fluffy, green and cozy. They are packed with banana flavor and all the healthy nutrients of the spinach and bananas! These green pancakes are fluffy, moist, and warm packed with banana flavor that will keep you making this recipe over and over.

step 1

Make the batter. Add all the ingredients for the spinach banana green pancakes to a food processor or blender. Blend until smooth.

Cook the pancakes.

FOR BAKING DIRECTIONS: Line a baking sheet with parchment paper. Preheat the oven to 350. Pour 2 tbsp of the green pancake batter into 6 small circles. They will grow and expand so make sure to space them out evenly. Bake for 7-11 minutes until pancakes are fully cooked.

FOR FRYING PAN DIRECTIONS: Spray the frying pan with cooking oil or add vegan butter. Pour 2 tbsp of of the green pancake batter into the hot frying pan and on medium heat cook until you start the see the edges are cooked and the center has little bubbles. Flip. Continue cooking until pancake is fully cooked. Set all pancakes onto a baking sheet when they are done.

Since it will likely take you a few minutes to make all the spinach banana green pancakes from your batter, you don’t want the first ones to get cold. I like to set all my finished pancakes onto a baking sheet and then place the baking sheet in a preheated 350 degree oven once im done for 5 minutes to warm them all together.

For chocolate chip pancakes mix in 1/2 cup of vegan, dairy free or standard chocolate chips before baking.

Blueberry pancakes

For blueberry pancakes mix in 1/2 cup of blueberry before baking.

Pumpkin spice pancakes

For pumpkin spice pancakes, mix in 1 tbsp of pumpkin spice into the batter before baking.

Cinnamon sugar pancakes

For cinnamon sugar pancakes, sprinkle each pancake with cinnamon and sugar while baking. Top with extra cinnamon sugar before serving.

Double chocolate pancakes

For double chocolate pancakes, mix in 1 tbsp of cocoa powder and 1/2 of chocolate chips into the batter before baking.

how to serve & store

I like to serve these spinach banana green pancakes with warm sugar free maple syrup and some vegan chocolate chips on top. If I’m hosting brunch for a holiday I also serve these green pancakes with a bowl of fruit salad on the side.
