I love ordering in Mexican food because it is so easy to make naturally gluten free with corn tortillas. But, l’m always debating do I want tacos that are made for me, or fajitas that are fun to make myself. In these Fajita Tacos, I don’t need to choose because it combines both dishes!! It has all the delicious flavors or classic fajitas, but all set up for you in tasty taco form. Plus, they only take 30 minutes to make, which is way faster than delivery!
These easy Fajita Tacos that can be made with chicken or steak or just meatless vegetarian! This good-for-you recipe is made on corn tortillas to make them naturally gluten free tacos.
These fajita tacos are quick to throw together which makes them perfect for an easy gluten free weeknight dinner, just like my vegan tostadas, my gluten free pizza stuffed peppers and my 30-minute gluten free enchilada casserole!

ingredients & substitutions
Onion: I used white onion here but you can use any onion you have to make this an easy recipe. Use white onion, yellow onion or red onion!
Bell pepper: Any color bell pepper works here. My favorite are red bell peppers. I use poblano peppers for a richer, deeper taste.
Fajita seasoning: I use a seasoning pack to make these Fajita Tacos easy. I like to make sure the seasoning I am using is certified gluten free. You can also make your own by combining chili powder, cumin, garlic powder, and onion powder!
Corn tortillas: Provides a sturdy base for the Fajita Tacos. I like to use 100% corn tortillas that way they are naturally gluten free.
Shredded cheese: Adds a creamy, cheesy texture to the oven baked tacos. For a dairy free recipe I use dairy free shredded cheese.

Step 1
Preheat oven to 400°F (200°C).
Step 2
Line a large sheet pan with parchment paper. Add the sliced onions and sliced peppers. Drizzle with olive oil and fajita seasoning. If using chicken or steak, season with fajita seasoning and add to sheet pan (optional)
Step 3
Bake in the preheated oven for 25-35 minutes, or until the vegetables are tender and slightly caramelized. Check that the meat is fully cooked before removing.
Step 4
Place a corn tortilla on a parchment lined baking sheet. Top with a generous amount of the cooked vegetables and protein (if using). Sprinkle with shredded cheese. Fold the Fajita Tacos in half and place it on a baking sheet. Repeat with the remaining tortillas. Pro tip: If tortillas are dry and risk cracking, add to oven for 1-2 minutes, then remove and fold in half. After the 1 minutes they will be softer and easier to fold.
Step 5
Bake the oven baked tacos for 5-8 minutes or until the cheese is melted and bubbly.
expert tips & tricks
Don’t let your tortillas crack! If tortillas are dry and risk cracking, add to oven for 1-2 minutes, then remove and fold in half. After the 1 minutes they will be softer and easier to fold.
Fajita seasoning is not the same as taco seasoning. There are several ingredients in common between fajita and taco seasoning! Both include chili powder, garlic powder, cumin, and paprika. Fajita seasoning has a smoky, savory, and herb forward flavor. Taco seasoning is a warmer seasoned flavor, and designed to stand out against any protein. Taco seasoning usually has a bit more oregano and chili powder than fajita seasoning.
serving, storing and meal prepping
These fajita tacos can be served with rice, beans or a side salad. I like to serve them hot right out of the oven for the freshest taste. I serve with salsa, sour cream and guacamole!
To store, I let it the gluten free tacos cool completely before refrigerating in an airtight container for up to four days.
For longer storage, I love to portion the oven baked tacos into freezer-safe containers and freeze for up to 2 months.
To meal prep, I follow the full recipe for the gluten free tacos and store them in group of 3. These individual portions are my favorite for great grab-and-go lunches or quick dinners during the week.

Ingredients
- 1 large white onion thinly sliced

- 1 teaspoon fajita seasoning
- 1 pound skinless chicken breasts or skirt steak cut into strips (optional)
- 8 corn tortillas gluten free
- 1 cup shredded cheddar cheese or dairy free sub
Instructions
