Crust: The Easy Gorgonzola Pizza with Onions base. Pre-baked gluten-free crust is used for ease. You can use any pre-made pizza crust or frozen pizza crust. Cook on a pizza stone or baking sheet lined with a piece of parchment paper, however you like to make your pizzas! You can even use homemade pizza dough. Use smaller individual crusts to create individual pizzas. If using pizza dough, roll out on a floured surface with a rolling pin. All these options are easily found at your local grocery store. I like the caulipower crusts or the trader joes gluten free frozen crusts.
Gorgonzola: Salty gorgonzola cheese is a strong, crumbly blue cheese. You can substitute with another type of blue cheese, feta cheese or a mix of mozzarella and goat cheese for a milder flavor.
Cheddar: Adds a sharp cheddar flavor. Substitute with any kind of cheese with a similar texture such as mozzarella or Monterey Jack cheese.
Butternut squash/pumpkin: Adds sweetness and texture. You can swap with sweet potato cubes for a similar taste.
Red onion: Adds a bit of bite. Use white or yellow onion instead if preferred.
Garlic: Adds savory depth. You can use garlic paste instead of fresh cloves.
Cinnamon: Pairs well with the sweetness of the squash. Omit if not a fan of the spice.
Honey: Drizzled for a touch of sweetness. Maple syrup can be used instead.
Sage: Fresh herb for a distinctive flavor. fresh thyme or rosemary can be used in its place.

- Roast the garlic: While the squash cooks, wrap peeled garlic cloves with 1 tablespoon olive oil in aluminum foil. Add to the preheated oven and bake for 30 minutes or until soft and easily mashed with a fork.
- Assemble the pizza: Spread mashed garlic over the pre-baked crust. Top with cheddar and mozzarella cheese, followed by the cooked butternut squash mixture and red onion.
- Drizzle with honey and scatter fresh sage leaves.
- Bake for approx 10-15 minutes or until cheese is melted, toppings are warmed through. Edges should be crispy and golden brown. Cooking time may vary depending on the crust thickness.

- 1 tablespoon ground cinnamon
- 1 tablespoon garlic powder
- ¼ cup diced red onion
- 5 fresh sage leaves
- 1 tablespoon honey
- 2 tablespoons minced garlic
- 2 tablespoons pumpkin seeds or pepitas optional
- Salt and pepper to taste
