    If you’re like me and LOVE pizza but also LOVE stuffed peppers… these pizza stuffed peppers are going to knock your socks off. Plus, the best part is they are naturally gluten free. So nothing to adjust, nothing to buy the gluten free version of, just whole, good-for-you ingredients. So next time you’re thinking about ordering in some pizza, do what I do and make these Gluten Free Stuffed Peppers instead!

    • This recipe makes for the perfect comfort food dinner! I love pizza and I love peppers so together… PERFECTION! I love bringing this to a potluck because no one ever knows it is actually gluten free and I get to safely enjoy it!
    • The best part about this Pizza Stuffed Peppers recipe is that it is a one pan meal…which means only one pan to make it and only one pan to clean up! My ideal situation since I hate doing dishes.
    • This recipe is allergy friendly. These stuffed peppers are naturally gluten free. You can use dairy free cheese for dairy free stuffed peppers! This recipe is also a vegetarian meal!
    • These vegetarian stuffed peppers are an easy freezer friendly meal, which means it is a great option for a meal prep lunches or dinners! I love to have it ready to go when I need to just pull a dinner out of the freezer and heat it up quick.
    Gluten Free Pizza Stuffed Peppers

    ingredients & substitutions

    Bell peppers: Use any color bell pepper you like, or you can substitute with zucchini, squash, or eggplant. I also like to use poblano peppers when I want a bit of a richer pepper taste with a little extra spice!

    Rice: I use brown rice, wild rice, or quinoa too when I don’t have white rice. To save time, and dishes I use microwave white or frozen rice in this Gluten Free Stuffed Peppers recipe!

    Marinara sauce: Use your favorite tomato sauce, or make your own. I like Rao’s the best! The garlic one is my favorite. You can also used crushed tomatoes and add your own italian seasoning for a quick homemade tomato sauce!

    Mozzarella cheese: You can use any shredded cheese you like on your pizza normally! I use dairy free cheese when I want to make dairy free Pizza Stuffed Peppers.

    Gluten Free Pizza Stuffed Peppers

    directions

    Step 1

    Preheat oven to 400°F (200°C).

    Step 2

    Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place the stuffed peppers in a baking dish or oven safe pan.

    Step 3

    Prepare the rice according to package instructions.

    Step 4

    Once cooked, spoon 1 spoonful of rice into each pepper half.

    Step 5

    Top with marinara sauce, garlic, basil, and oregano. Top with mozzarella cheese.

    Bake the Gluten Free Stuffed Peppers for 30-35 minutes, or until the cheese is melted and bubbly. Remove from the oven and top with chopped spinach, red onion, banana peppers, red pepper flakes, and black olives.

    expert tips & tricks

    • For a spicier pizza stuffed peppers, add more red pepper flakes or use a spicy marinara sauce.
    • You can substitute brown rice for white rice for a low carb pizza stuffed pepper recipe.
    • I use dairy free or vegan cheese for a dairy free recipe.
    • I like to add other vegetables I have laying around to the rice mixture too for a “clean out your fridge” Gluten Free Stuffed Peppers recipe! I add spinach, mushrooms or zucchini.

    These vegetarian stuffed peppers are delicious served as is! I also like to serve them with a side salad. I serve them hot, right out of the oven for the freshest taste with my favorite pizza toppings. I like to dip my pizza in ranch dressing so I often dip pieces of these pizza stuffed peppers in ranch dressing too!

    To store, I let the Gluten Free Stuffed Peppers cool completely before refrigerating in an airtight container for up to four days.

    For longer storage, I love to portion the Pizza Stuffed Peppers into freezer-safe containers and freeze for up to 2 months.

    To meal prep into individual portions, divide the Gluten Free Stuffed Peppers into separate containers. These individual portions are my favorite for great grab-and-go lunches or quick dinners during the week.
