Gluten Free Pizza Stuffed Peppers

If you're like me and LOVE pizza but also LOVE stuffed peppers... these pizza stuffed peppers are going to knock your socks off. Plus, the best part is they are naturally gluten free. So nothing to adjust, nothing to buy the gluten free version of, just whole, good-for-you ingredients. So next time you're thinking about ordering in some pizza, do what I do and make these Gluten Free Stuffed Peppers instead!

Ingredients
  

  • 4 bell peppers
  • 1 cup rice white or brown
  • 2 cu[s marinara sauce
  • 1 cup low fat shredded mozzarella cheese or dairy free cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/4 cup spinach chopped
  • 1/4 cup red onion chopped
  • 1/4 cup banana peppers chopped
  • 1/4 cup black olives chopped
  • 1 tablespoon red pepper flakes optional

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Cut the bell peppers in half lengthwise and remove the seeds and membranes.
  • Place the stuffed peppers in a baking dish or oven safe pan.
  • Prepare the rice according to package instructions.
  • Once cooked, spoon 1 spoonful of rice into each pepper half.
  • Top with marinara sauce, garlic, basil, and oregano.
  • Top with mozzarella cheese.
  • Bake for 30-35 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and top with chopped spinach, red onion, banana peppers, red pepper flakes, and black olives.
