    French Onion Gluten free Lasagna

    Classic french onion soup is one of my all time favorite comfort foods. French onion soup might be the coziest soup of all time. It was ALWAYS my default order at a restaurant which I was a kid. This French Onion Gluten free Lasagna recipe really takes those classic french onion flavors and layers them in one pan like a traditional style lasagna.

    This gluten free lasagna recipe has a few shortcut ingredients that give it a ton of flavor. It’s a family favorite nobody will guess is gluten-free! A warm, bubbly lasagna layered with cheese and caramelized onions, topped with a beef bone broth. Basically all the flavors or a traditional french onion soup. This french onion lasagna is an easy one-pan recipe, that bakes in less than 30 minutes which means its pefect for a gluten free weeknight dinner.

    • This french onion lasagna recipe makes for the perfect comfort food dinner.
    • The best part about this recipe is that it is a one pan meal! I.e. minimal dishes to do afterwards! I hate doing dishes so this is so ideal for me!
    • This recipe is allergy friendly! Yep! You heard that right! You can use gluten free lasagna noodles like I did. You can also use dairy free cheese for an easy dairy free option!
    • This Gluten free Lasagna casserole is an easy freezer friendly meal… which means it is a great option for a meal prep! You’ll have it ready to go when you need to just pull a dinner out of the freezer. It heats up quick and makes your weeknight dinners so much easier!

    ingredients & substitutions

    No-boil lasagna noodles: These noodles are pre-cooked and ready to use, saving time. If you are celiac like me, or eat a gluten free diet, use gluten free lasagna noodles here! You can also use the regular gluten free lasagna noodles here (that are not no-boil). They are thicker so I would just add another 1/2 cup – 1 cup of beef broth or bone broth beause they will need to absorb more liquid.

    Beef stock or bone broth: This provides a rich and savory base for the sauce. Beef broth is typically what is used in french onion soup and will give the savory french onion flavor to the dish! I use bone broth which is richer and has more flavor.

    Onions: Caramelized onions add a sweet and savory flavor to the lasagna.

    Shredded chicken: This adds protein and flavor to the lasagna.

    Ricotta cheese: Ricotta adds a creamy and mild flavor to the french onion lasagna. For a dairy free recipe, I use dairy free ricotta.

    Mozzarella cheese: Mozzarella melts well and adds a stretchy and cheesy texture. For a dairy free recipe, I use dairy free mozzarella.

    Fresh spinach: Spinach adds a freshness to the Gluten free Lasagna casserole and if you’re like me, I like to pack my dishes with any fresh vegetables I can find!

    Minced garlic: Garlic adds a savory flavor to the lasagna. You can also use garlic powder instead.

    Step 1

    In a large oven-safe skillet, add the onions. Cook on medium heat until they are caramelized, or a deep golden brown. This may take 15-20 minutes.

    Step 2

    Add 3/4 cup of the bone broth to the skillet with the caramelized onions. Bring to a simmer and let it reduce slightly.

    Step 3

    In the same skillet, layer the no-boil lasagna noodles, caramelized onions, chicken, ricotta cheese, mozzarella cheese, spinach, and minced garlic. Repeat layers until all ingredients are used. Pour remaining beef bone broth over top so the lasagna noodles have a liquid to absorb.

    Step 4

    Bake in a preheated oven at 375°F (190°C) for 25-30 minutes, or until the cheese is bubbly and golden brown and the lasagna noodles are cooked and soft.

    Let the Gluten free Lasagna casserole cool for a few minutes before serving. Enjoy!

    expert tips & tricks

    • Use “oven ready” or “no bake” gluten-free lasagna noodles. This will save you a ton of time when making the french onion lasagna since there is no need to pre-cook them. Also one less pot you need to wash!
    • If you use frozen spinach here instead of fresh, always squeeze and drain the water out of the chopped spinach. You don’t want any extra liquid in your lasagna…at least I don’t!
    • Cottage cheese can be used in place of the ricotta cheese for a high protein option.
    • If you like a nice cheesy topping like a traditional lasagna or a traditional french onion soup, I use more cheese on top and then I broil for a few minutes to get it browned and bubbly!

    serving, storing and meal prepping

    This French Onion Gluten free Lasagna casserole can be served with a side salad or garlic bread. I like to serve it hot right out of the oven for the freshest taste. It is best served hot!

    To store, I let it cool completely before refrigerating in an airtight container for up to four days.

    For longer storage, I love to portion the Gluten free Lasagna casserole into freezer-safe containers and freeze for up to 2 months.

    To meal prep into individual portions, I divide the french onion lasagna into separate containers. These individual portions are my favorite for great grab-and-go lunches or quick dinners during the week.
