Fajitas shouldn’t be complicated. All you need is juicy, flavorful chicken with lightly charred peppers and onions, all cooked up in one single skillet. I don’t use 100 different pots and pans. I don’t use a million different ingredients. I don’t like to overcomplicate things. These cast iron skillet fajitas are delicious, flavorful and a naturally gluten free recipe.

Do I need to use a cast iron skillet?
I prefer a cast-iron skillet for these gluten free fajitas because it makes life so much easier. It works on the stovetop, in the oven and keeps the fajitas warm when on the table. If you don’t have a cast iron skillet, you can use any large skillet you have for this skillet chicken fajitas recipe.

ingredients & substitutions
Boneless skinless chicken breasts: I like to use chicken breasts here. Sometimes I cut the breast up into one inch strips so they cook faster in the skillet. You can also use the full chicken breasts and cut them once they are fully cooked. If you have chicken, tenderloins or chicken tenderloins are cheaper at the grocery store feel free to use them here instead!
Bell peppers: I like to use bell peppers in these cast iron skillet fajitas because they are the traditional option and have a muted taste. If you want a richer taste, you can use poblano peppers instead.
Onions: used white onions here, but you can use white onions, yellow onions, or red onions!
Fajita seasoning: I like to use a premade mixed seasoning to make my life easier and to save time when making these gluten free fajitas. I like to make sure that my fajita seasoning mix is certified gluten-free to make a gluten-free meal. If you don’t have a mix you can make your own!

Step 1
Preheat your oven to 400°F (200°C).
Step 2
Add seasoned chicken strips, peppers and onions to the skillet. and cook for 5-7 minutes per side, or until cooked through.
Step 3
Drizzle with olive oil.
Step 4
Season with fajita seasoning, salt, and pepper.
Step 5
Transfer the cast iron skillet fajitas to the preheated oven and bake for 20-30 minutes, or until the chicken is cooked through and the vegetables are tender-crisp.
Step 6
Serve the gluten free fajitas immediately with warm tortillas, your favorite toppings (such as salsa, guacamole, sour cream, and shredded cheese), and a lime wedge for squeezing.

I love to serve the cast iron skillet fajitas with salsa, hot sauce, sour cream, guacamole, lettuce, tomato and cheese! That way everyone can pick and choose their favorite toppings and customize their own fajitas.
You can cook the chicken as breasts or as tenders. My local grocery store sells chicken in full breasts or as tenderloins. Both work well for these skillet chicken fajitas. You can also cut the raw chicken breast into strips before cooking. It is always easier to cut a cooked piece of meat after it’s had a chance to rest.
serving, storing and meal prepping
I love to serve these fajitas make-your-own style with all my favorite toppings. I like to serve it hot right out of the oven for the freshest taste. Serve with a side of salsa, hot sauce, sour cream, guacamole, lettuce, tomato and cheese! I also serve with warm corn tortillas to make sure these are gluten free fajitas.
To store, I let the gluten free fajitas cool completely before refrigerating in an airtight container for up to four days.
For longer storage, I love to portion the cast iron skillet fajitas into freezer-safe containers and freeze for up to 2 months.
To meal prep into individual portions, divide the cast iron skillet fajitas into separate containers. These individual portions are my favorite for great grab-and-go lunches or quick dinners during the week.
