During the fall I love to squeeze butternut squash into honestly every meal I can. Whether it’s on pizza or salad, or even in sauce… count me in! I used this butternut squash in a thich, decadent butternut squash alfredo sauce, creamy and bursting with garlic and cheese.

Ingredients & Substitutions
Butternut squash: I use butternut squash puree in this butternut squash alfredo sauce to make it thick, flavorful and full of that fall vegetable flavor. You can also use sweet potato puree or pumpkin puree. If you cannot find butternut sqaush puree, roast your own butternut squash cubes and an immersion blender to make it into a puree.
Oat Milk: You can use any vegan milk here. I like to use oat milk because it is thick, gluten free and easy to make creamy sauces out of! My favorite if Califia Farms – Oat Barista Blend Oat Milk.
Vegan Parmesan Cheese: Any dairy free parmesan cheese or vegan parmesan cheese is perfect here! I use very generously…there can never be too much parmesan cheese in my opinion!
How do I make this butternut squash alfredo sauce?
First, I add the garlic and onion to a saucepan. Next, I add in 1 tbsp olive oil. I cook on medium heat for 7-10 minutes until the garlic is browned and the onion is translucent.
Next, I add in the pumpkin purée, milk, and cheese to the saucepan.

Once mixed together, I continue to cook the butternut squash alfredo sauce on low heat for 15-20 minutes. This will warm the sauce, melt the cheese and make the sauce come together.
Why it’s different than traditional Alfredo sauce?
Have you ever made Alfredo sauce from scratch? It is made with a stick of butter, heavy cream, and lots of parmesan cheese. Which does sound delicious. This butternut squash alfredo sauce is different because instead of heavy cream, I’m using oat milk and instead of butter I’m using the butternut squash.
How Can I use fresh butternut squash?
To use fresh butternut squash and not butternut squash puree, I use pre-cut butternut squash or frozen butternut squash. I roast it in the oven on 350 for about 30-40 minutes, then throw it in a pot and use an immersion blender to make it a creamy puree.

How Do I Serve this?
Pour the butternut squash alfredo sauce over your favorite pasta, use over rice in your favorite casserole or add it on top of your chicken!
How do I Store the butternut squash alfredo sauce?
To store, I let the butternut squash alfredo sauce cool completely before refrigerating in an airtight container for up to four days.
For longer storage, I love to portion into freezer-safe containers and freeze for up to 2 months.

How Do I prepare this ahead of time?
I also love to make the butternut squash alfredo sauce and freeze it until I want to use it. That way I have a homemade sauce ready to go when I need a quick meal. I freeze for up to 2 months.
How do I Meal Prep this recipe?
To meal prep into individual portions, divide the butternut squash alfredo sauce into separate containers. These individual portions are my favorite for great grab-and-go lunches or quick dinners during the week.
How do I reheat butternut squash alfredo sauce leftovers?
If the butternut squash sauce leftovers are stored in the fridge, I add to a skillet and warm on medium low heat so it does not burn. Make sure to only heat it until it is warm and not overcook.

Butternut Squash Alfredo Sauce (Vegan, Gluten free)
Ingredients
- 15 oz Butternut Squash puree 1 can
- 1 1/2 cups Oat milk
- 1/2 cup Dairy free Parmesan Cheese
- 2 tsp Garlic minced
- 1/2 Onion Minced
- 2 tbsp Red pepper flakes
- Crack black pepper to taste
