We loved adding all the veggies in different colors onto the wooden skewers. Then my dad would grill them up outside. To this day, I still love assembling them! These Gluten Free Chicken Recipe takes 10 minutes to prepare, 20 minutes to cook and is made with a simple marinade you can use on chicken over and over!

Chicken breasts: I love chicken because its a great lean protein option that is easy to work with. This marinade also works great for tofu, tempeh, or seitan for any plant-based option!
Honey hot sauce: If you prefer a different heat level or flavor, sriracha, chili sauce, or hot sauce of your choice can be used instead. Totally up to you!
Honey: Maple syrup or agave nectar are good alternatives for those who need a different sweetener for this gluten free chicken recipe.
Garlic powder: I love adding garlic for a savory spice. I LOVE garlic, but if you don’t, you can use onion powder instead.
Low-sodium gluten-free soy sauce, coconut aminos, or tamari: All of these I use interchangeably! This is the base of the gluten free chicken marinade for the Asian chicken skewers.

Step 1
On a cutting board, pound the chicken until it is evenly 3/4″ thick. Cut chicken breasts into 2″ pieces.
Step 2
In a large bowl, combine the honey hot sauce, honey, garlic powder, and soy sauce (or coconut aminos/tamari). Add the chicken pieces and toss to coat. Cover and refrigerate for at least 30 minutes, or up to overnight.
Step 3
Thread the marinated chicken pieces onto the wooden skewers. Option to add red bell pepper, yellow bell pepper, and onion to make this a fully balanced meal.
Step 4
Grill the skewers over medium-high heat for 15-20 minutes, or until the chicken is cooked through. Alternatively, cook the Asian chicken skewers in an air fryer at 400°F (200°C) for 10-12 minutes, or until cooked through.
expert tips & tricks
- Marinating Time: While the gluten free chicken recipe calls for at least 30 minutes, for optimal flavor, I have also marinated the chicken overnight in the refrigerator. This allows the flavors to penetrate the meat more deeply if you have more time. If you are short on time, the 30 minute marinade works great!
- Chicken Appearance: When fully marinated, the chicken pieces should be evenly coated with the marinade and have a slightly sticky texture.
- Skewer Placement: Ensure that the chicken pieces and vegetables are evenly spaced on the skewers to prevent uneven cooking. I really like to make sure the chicken isn’t pushed too closely together so it has room to cook on all sides.
- Cooking Time: Adjust the cooking time based on the thickness of the chicken pieces and the heat source you’re using.
- Resting Time: After cooking, let the Asian chicken skewers rest for a few minutes before serving to allow the juices to redistribute.

This gluten free chicken recipe can be added to pasta, tacos, wraps, rice or salads! I like to serve it hot right out of the oven for the freshest taste.
To store, I let the gluten free chicken recipe cool completely before refrigerating in an airtight container for up to four days.
For longer storage, I love to portion into freezer-safe containers and freeze for up to 2 months.
