Gluten Free Chicken Recipe with an Aisian Marinade

I grew up making chicken and veggie skewers on the grill every summer. My parents used to let my sister and I help make them! We loved adding all the veggies in different colors onto the wooden skewers. Then my dad would grill them up outside. To this day, I still love assembling them! These Gluten Free Chicken Recipe takes 10 minutes to prepare, 20 minutes to cook and is made with a simple marinade you can use on chicken over and over!

- 1 pound chicken breasts
- 1 tablespoon honey hot sauce
- 3 tablespoons honey
- 1 teaspoon garlic powder
- 2 tablespoons gluten-free soy sauce coconut aminos, or tamari
- 10 wooden skewers
Optional Additions:
- 1 red bell pepper cut into 2-inch pieces
- 1 yellow bell pepper cut into 2-inch pieces
- 1 onion cut into 2-inch pieces
On a cutting board, pound the chicken until it is evenly 3/4" thick.
Cut chicken breasts into 2" pieces.
In a large bowl, combine the honey hot sauce, honey, garlic powder, and soy sauce (or coconut aminos/tamari).
Add the chicken pieces and toss to coat.
Cover and refrigerate for at least 30 minutes, or up to overnight.
Thread the marinated chicken pieces onto the wooden skewers. Option to add red bell pepper, yellow bell pepper, and onion to make this a fully balanced meal.
Grill the skewers over medium-high heat for 15-20 minutes, or until the chicken is cooked through. Alternatively, cook the skewers in an air fryer at 400°F (200°C) for 10-12 minutes, or until cooked through.
For the whole skewers:
- Assemble the skewers: Thread the marinated chicken pieces onto wooden skewers, alternating with zucchini, onion, and red pepper.
- Cook the skewers: You can cook the skewers in three different ways:
- Grill: Preheat your grill to medium-high heat. Grill the skewers for 15-20 minutes, or until the chicken is cooked through and the vegetables are tender.
- Air fryer: Preheat your air fryer to 400°F (200°C). Air fry the skewers for 10-12 minutes, or until the chicken is cooked through and the vegetables are tender.
- Oven: Preheat your oven to 400°F (200°C). Heat a grill pan over medium-high heat. Place the skewers on the grill pan and cook for 15-20 minutes, or until the chicken is cooked through and the vegetables are tender.
