Gluten Free Chicken Recipe with an Aisian Marinade

I grew up making chicken and veggie skewers on the grill every summer. My parents used to let my sister and I help make them! We loved adding all the veggies in different colors onto the wooden skewers. Then my dad would grill them up outside. To this day, I still love assembling them! These Gluten Free Chicken Recipe takes 10 minutes to prepare, 20 minutes to cook and is made with a simple marinade you can use on chicken over and over!

Ingredients
  

  • 1 pound chicken breasts
  • 1 tablespoon honey hot sauce
  • 3 tablespoons honey
  • 1 teaspoon garlic powder
  • 2 tablespoons gluten-free soy sauce coconut aminos, or tamari
  • 10 wooden skewers

Optional Additions:

  • 1 red bell pepper cut into 2-inch pieces
  • 1 yellow bell pepper cut into 2-inch pieces
  • 1 onion cut into 2-inch pieces

Instructions
 

  • On a cutting board, pound the chicken until it is evenly 3/4" thick.
  • Cut chicken breasts into 2" pieces.
  • In a large bowl, combine the honey hot sauce, honey, garlic powder, and soy sauce (or coconut aminos/tamari).
  • Add the chicken pieces and toss to coat.
  • Cover and refrigerate for at least 30 minutes, or up to overnight.
  • Thread the marinated chicken pieces onto the wooden skewers. Option to add red bell pepper, yellow bell pepper, and onion to make this a fully balanced meal.
  • Grill the skewers over medium-high heat for 15-20 minutes, or until the chicken is cooked through. Alternatively, cook the skewers in an air fryer at 400°F (200°C) for 10-12 minutes, or until cooked through.

Notes

For the whole skewers:
  • Assemble the skewers: Thread the marinated chicken pieces onto wooden skewers, alternating with zucchini, onion, and red pepper.
  • Cook the skewers: You can cook the skewers in three different ways:
    • Grill: Preheat your grill to medium-high heat. Grill the skewers for 15-20 minutes, or until the chicken is cooked through and the vegetables are tender.
    • Air fryer: Preheat your air fryer to 400°F (200°C). Air fry the skewers for 10-12 minutes, or until the chicken is cooked through and the vegetables are tender.
    • Oven: Preheat your oven to 400°F (200°C). Heat a grill pan over medium-high heat. Place the skewers on the grill pan and cook for 15-20 minutes, or until the chicken is cooked through and the vegetables are tender.
