    Yogurt Marinated Chicken (Gluten free)

    Rarely do I make a promise like this but, I promise you this recipe makes for the best juicy and tender chicken you will ever have. This easy Yogurt Marinated Chicken recipe only uses 3 ingredients and bakes for 30 minutes, as good as my gluten free chicken marinade but with less ingredients! If this yogurt marinated chicken is not the easiest weeknight dinner recipe, then I don’t know what is!

    The chicken breasts (or chicken thighs) marinate in a yogurt and spice mixture that’s bursting with greek flavors. Marinating chicken in yogurt is one of the best hacks I have ever learned. I love marinating my chicken with yogurt because it makes the chicken so tender and locks the juices in!

    • You can make this yogurt marinated chicken recipe in a skillet, oven, grill or air fryer. I used a grill pan in the oven and have also made it with a grill pan in the air fryer.
    • These baked chicken skewers make the perfect protein for a comfort food dinner! Throw it on salads, in pasta, in tacos or for greek bowls!
    • The best part about this greek chicken marinated in yogurt is that it is a one pan meal…which means only one pan to make it and only one pan to clean up! My ideal situation since I hate doing dishes. I like to add the marinade to a zip block bag for easy clean up.
    • This recipe is allergy friendly. It is a naturally gluten free recipe. You can use dairy free yogurt for an easy dairy free option!
    • It’s an easy freezer friendly recipe, just pull it out and heat it up when you need protein in a recipe!

    ingredients & substitutions

    Chicken: The chicken is the main ingredient in this yogurt marinated chicken. It is a lean protein that is high in protein and low in fat. You can use chicken thighs here instead if you want!

    Plain Greek yogurt: Yogurt is a gentle, effective and affordable way to tenderize meat. It breaks down the proteins in the meat to give a tender and moist texture. If you are lactose intolerant you can use a lactose free yogurt for this greek chicken marinated in yogurt.

    Greek seasoning: The Greek seasoning is a blend of herbs and spices that is commonly used in Greek cuisine. It adds a savory flavor to the baked chicken skewers. If you do not have greek seasoning you can use taco seasoning or italian seasoning. You can make your own greek seasoning by mixing together garlic, oregano, basil, paprika, salt and pepper.

    Step 1

    Pound the chicken thin and then cut the chicken into 2” pieces.

    Add yogurt and seasoning to a bowl (or zip block bag). Mix together. Add the chicken pieces to the yogurt marinade. Mixed together until all the chicken is covered by the yogurt.

    Add to the refrigerator and let marinate for at least 30 minutes.

    Add marinated chicken pieces to the skewers. I used medium size skewers.

    Then add the chicken skewers to your grill pan. Bake the yogurt marinated chicken on 350 for 30 minutes or until chicken is fully cooked.

    expert tips & tricks

    • I like to marinate my chicken for at least 30 minutes before baking. The longer you marinate the chicken, the more tender the chicken gets.
    • To keep the outside of the chicken from drying out, I spray my yogurt marinated chicken skewers with an olive oils spray before cooking.
    • When I use chicken breasts, I like to pound them before cutting them into pieces. This ensures I have pieces that are all of even thickness before baking.
    • Cook times for the greek chicken marinated in yogurt will vary based on size or thickness of chicken.
    • I’m a big fan of a meat thermometer! Use a meat thermometer to make sure the chicken is done before removing from the oven.
    • Make sure to let the baked chicken skewers rest for a few minutes after cooking and before serving.

    I like to serve these baked chicken skewers with rice and a Greek salad using hummus as the dressing. I also ask my husband to make some of his homemade tzatziki!

    To store, I let the yogurt marinated chicken cool completely before refrigerating in an airtight container for up to four days.

    For longer storage, I love to portion the baked chicken skewers into freezer-safe containers and freeze for up to 2 months.

    To meal prep into individual portions, divide the yogurt marinated chicken into separate containers. These individual portions of the greek chicken marinated in yogurt are my favorite for protein on top of my great grab-and-go lunches or quick dinners during the week.

    Ingredients
      

    • 1 pound boneless skinless chicken breasts cut into 2-inch pieces
    • 1/2 cup plain fat free Greek yogurt
    • 2 tablespoons Greek seasoning or a mixture of garlic powder, oregano, basil, paprika, salt, and pepper

    Instructions
     

    • Prepare the marinade: In a small bowl, combine the plain Greek yogurt and Greek seasoning. Stir well until the seasoning is evenly distributed.
    • Marinate the chicken: Place the cut chicken pieces in a large bowl. Pour the prepared marinade over the chicken and toss to coat evenly. Cover the bowl and refrigerate for at least 30 minutes, or up to overnight for maximum flavor.
    • Assemble the skewers: Thread the marinated chicken pieces onto medium-sized metal skewers, spacing them evenly apart.
    • Grill the skewers: Preheat your grill to medium-high heat. Place the skewers on the grill and cook for 10-12 minutes, or until the chicken is cooked through and slightly charred. Flip the skewers halfway through cooking to ensure even browning.
    • Serve: Remove the skewers from the grill and let them rest for a few minutes before serving. Enjoy the grilled chicken skewers with your favorite sides, such as rice, salad, or roasted vegetables.
