- 1 package rice noodles or brown rice noodles
- 2 cups Broccoli florets
- 1 lb boneless skinless chicken breasts
For the sauce
- 1 1/2 cups coconut aminos or gluten free soy sauce
- 2 tsp hot sauce
- 1 tbsp brown sugar
- 1 tbsp sesame oil
Soak the rice noodles in warm water for 25 minutes until softened.
In a large skillet, add the cooked chicken and oil. Cook for about 5-7 minutes until chicken is fully cooked. Remove and set aside.
In the same pan, add the broccoli. Cook for 5-7 minutes until edges are charred.
Prepare the sauce by whisking together the soy sauce, hot sauce, brown sugar, and sesame oil in a small bowl.
Once the broccoli is cooked, add back in the chicken. Add the noodles.
Pour the sauce into the skillet covering the chicken, broccoli, and rice mixture. Stir to coat evenly.
Cook for an additional 3-5 minutes, or until the sauce and noodles are heated through.
Add optional crushed peanuts on top.
