Chicken Caesar Pasta Salad (gluten free)

This Chicken Caesar Pasta Salad is a fun pasta salad packed with gluten free pasta, crispy chickpeas, chicken and caesar dressing.

- 1-2 cups romaine lettuce
- 1/2 cup grilled chicken chopped (or plant based substitute)
- 1-2 cups gluten-free pasta fully cooked
- 1/2 cup crispy oven-baked chickpeas seasoned
- 2-3 tbsp Caesar salad dressing lite or plant based
Chopped romaine lettuce, and add to bowl.
Top with chopped grilled chicken.
Cook the gluten-free pasta according to box directions. Once fully cooked, drain and rinse with cold water.
Add can of drained chickpeas to a cookie sheet. Top with olive oil and seasoning of choice I used garlic, salt, pepper, parsley and onion powder. Bake until chickpeas are crispy.
Add the gluten-free pasta to the salad bowl.
Top with crispy chickpeas and dressing.
