Buffalo Chicken Stromboli (Gluten Free)

Anything that tastes like pizza and can be eaten with your hands is a winner for me. I love handheld food. Heck sometimes I just want a snack plate for dinner and these buffalo chicken strombolis are perfect for the type of vibe. This buffalo chicken stromboli recipe is also my go-to for a party, get together or a holday. They are spicy, crispy and filled with melted cheese! I brought these gluten free stromboli to our family christmas party last year and they were SUCH a hit.

- 1 pizza dough or gluten free pizza dough
- 2 cups mozzarella cheese or dairy free sub
- 2 cups chicken fingers chopped
- 3/4 cup buffalo sauce or dairy free buffalo sauce
Roll out the dough with a rolling pin as thin as you can. Sprinkle gluten free flour over the top of the dough if it is sticking to the pin.
Air fry the chicken fingers until crispy and cooked.
Top the dough with cheese, chicken fingers (should be cooked or room temp, not frozen or raw), and buffalo sauce.
Roll the dough into a log. Make sure to tuck the ends in so no cheese comes out!
Bake at 350 for 25-30 minutes.
