Cook or Shred the Chicken: If you don’t have leftover chicken or a rotisserie chicken, you can cook the chicken breasts in a crockpot with 2 cups of water, broth, or chicken stock. Cook for 3 hours on high or until the chicken is fully cooked. Once cooked, shred the chicken.
Prepare the Crust: Follow the package instructions for your pizza crust. If it needs pre-baking, do so before adding toppings.
Combine Chicken and Sauce: In a bowl, mix the shredded chicken with the chipotle sauce. Set aside.
Assemble the Pizza: Spread the cheese evenly over the prepared crust. Top with the chicken mixture.
Bake: Bake the pizza at 350°F (175°C) until the crust is crispy, the cheese is melted, and the toppings are warmed through, about 10-15 minutes.
Add Fresh Toppings: Once out of the oven, top the pizza with the diced tomatoes, arugula or lettuce, and a drizzle of ranch dressing.
